Nasturtiums have quickly become one of my favourite garden flowers. They are so easy to grow and produce masses of cheerful flowers for months on end, that the bees absolutely love. All above-ground parts of the plant are edible including the flowers, leaves, stems and fresh, green pods. Nasturtiums have a green, spicy, fiery flavour, reminiscent of rocket or wasabi.
Unfortunately, the FODMAP content of nasturtiums hasn't been tested so it's best to avoid them during the elimination phase of a low FODMAP diet. Once you're in the personalised phase of the diet then consider experimenting with them.
The flowers look pretty in salads or desserts. The leaves are a great replacement for spinach or rocket and make a delicious pesto. The largest leaves can be stuffed like vine leaves. The stems can be chopped finely and used in place of chives. The green pods are my favourite part. They are the most pungent, spicy part of the plant and can be pickled like capers.
