I really need to do this again!! Been over a decade since I made sausage and I had the pleasure of making them with a good german friend over in Germany. I still can't find any as good as they were!! Thanks for sharing Rus and I hope you are having a great week!

What a great video! I was searching PS seasonings (since I am now hooked on PS Backyard Better Burger) and ended up watching this entire video. So glad you showed the provolone in the sodium citrate. That really made a nice sauce and I had no idea it was that easy to do!

Yes! I bought a sausage stuffer attachment for my kitchen aid almost a year ago and I yet to have made sausage. Really looking forward to these sausage videos to inspire me

I got my seasoning about 2 weeks ago. The package I got wasn't quite as nice looking as yours. Just a white bag with black writing. Not sure of the seasoning. Not like yours. I'm just not sure about this, Rus. It was too expensive not to try it.

@@toms.3977 I wouldn't concern myself to much about the packaging, as long as it is the correct seasoning inside. It's not unusual for companies to change packaging. I've gotten a few things from PS that was in a white bag with lettering as you described here. I honestly think the white bags are more durable and tougher

Excellent job Rus, you really got me hooked! Bratwurst is the favorite go-to-food for the old Kraut that i am. Gimme some potatos with that, pour me a beer and I'll be the happiest man for the rest of the day.

Thanks for this, Russ. It looks delicious. I really like a coarse ground sausage with chunks of muscle and fat. I know many people like the fine ground, fully emulsified sausage in the style of a hot dog or mortadella but it just isn't my favourite.

Rus, saw your German sausage video and I purchased the Sheboygan Bratwurst (PSeasoning), took me back to the bratwurst days growning up. However, uncased / sausage patty it is very heavy in clove. Which the flavors meld when cased and cooked. Will have to try the philly seasoning!

You should try the seasoning I put together for that German bratwurst. It was really good. I've never had the Sheboygan from PS. I've only found one sausage seasoning they make that I didn't care for because of the clove, but it was a boudin seasoning. Clove doesn't belong in boudin, or at least not where I'm from.

Good sausages man, as a tip mix your meal / spice into your water then mix into the meat and don’t tie off the end of the skin when on your sausages stuffer, you want the air to push out to avoid. I found my sausages tasted better after leaving in the fridge for 24 hours for the flavours to develop. Your ones do look damn fine!!!!!!!!!!!!!!!!!!!

Thanks for the tips! I usually do place the links overnight uncovered in the fridge to develop flavors and a pellicle on the casing so smoke will adhere better, but unfortunately I normally only have one day a week to shoot these videos. I'm hoping I have the entire weekend off this week so I can do exactly that on the next video. On smoked sausage, I honestly think they should go back into the fridge after smoking to let the smoke distribute and mellow for a few days like I do with bacon. Thanks for watching, I appreciate it!

It's the standard for sausage making. It becomes soft but doesn't melt out of the casings and all through the meat.
