Homemade Potato Flakes • Dehydrating & Vacuum Sealing

I have LOTS of tips throughout this video, so don't miss any of it! Learn how to make a good, storage-worthy mashed potato, dehydrate it, then vacuum seal for proper storage.
Recipe & measurements for RE-hydrating to eat (2 servings):
2/3 C water
1 T butter
1/4 tsp salt
1/4 C milk
2/3 C potato flakes
Heat water, butter & salt to boiling. Remove from heat.
Stir in milk and potato flakes with a fork until desired consistency.
Add seasonings to taste.

This was amazing I have been dehydrating frozen vegetables I am having so much fun . I've been canning peaches, pears, milk,beans spaghetti sauce I have run out of jars. I canned a lot when I had my family I am 81 and am hooked on RU-vid and will have at least a yrs food put up . You did a great job

try rolling the potato out under wax or parchment paper, freeze them the remove paper and dehydrate.. I did that with my daughters baby food years ago and it worked great !

Thank you! Someone a bit grumpy, I guess 😏. Thanks for the kind words. Note: the thinner you spread them, the better they flake. Rehydrating is about 1 part flakes and two parts water/milk, depending on the kind of potato and how thin they were at dehydration. Blessings!

Northstar Prepsteader So after watching the video and seeing the entire process, what would you suggest for red potatoes, apparently that’s what we have 450 million of, red potatoes

@@JHobartMusic72 haha, wow! Well, according to google and the people therein, Yukon golds are the best for mashing, then flaking. Reds are more of a waxy potato, lower in starch and can get really "pasty" when mashing. They are best roasted & fried. However, you can shred them (food processor grate), and either freeze them for hash browns, or dehydrate them for rehydrated hash browns, adding to soups/stews/casseroles, making potato flour for baked goods, pancakes, etc. Here's a site that might help: seedtopantryschool.com/dehydrating-potatoes-plus-secret-revealed/

Interesting process... watching this, I was wondering how putting the potatoes through a potato ricer might work out, instead of beating them. I started using a ricer in lieu of whipping mashed potatoes a few years ago and like the condistency. Well, this gave me the idea to try that. Thanks!

Thank you great video . Pro tip: drain them and toss em in a colander immediately after taking them off the heat, the steam from tossing will evaporate the water faster . Mash while hot your potatoes will be smoother faster .

Hi Northstar Prepsteader. I know it's been a few years since you uploaded this video but, perhaps you'll get a notification of a new post. I also vacuum seal my dehydrated goods. I do have a vacuum sealer but, I have also bought a "break bleeder", (found cheap in most automotive stores) which is an contraption that is used when airing the breaks on your car/truck when replacing the break fluid. However, that thing works VERY good at sucking the air out of jars the same/similar way an electric vacuum sealer does, just without the electricity since it is hand pumped. (up to around 15lbs of pump pressure, which you can see on the gauge connected to the break bleeder) You'll still need to use the plastic lid that you use along with the electric vacuum sealer but, one of the several nozzles included in the break bleeder box, fits the hole in the lid. I've seen it when I've watched Rain Country's RU-vid channel and seen her demonstrate the break bleeder technique several times and, figured that if/when the power goes out, I'd still be able to vacuum seal my dehydrated foods. I have tried it several times when I've been to lazy to dig out my electric sealer and it works just as good as the electric one. What I also like about vacuum sealing my dry goods jars is that you can successfully use used lids. As long as they're not bent out of shape or damaged somehow. They don't have to go through the whole hot process in either water bath canning or pressure canning and hold the seals just as good as new lids. I've had stored for up to 2 years so far, without loosing a seal on a dehydrated jar. Thank you for a great tutorial on dehydrating mashed potato flakes! 🙏

Great video! One tip for you. Take a coffee filter and cut a round out to put inside your attachment. It will prevent powders from being sucked up into your machine.

I made instant mashed sweet potatoes last fall. I baked, squeezed sweet potatoes out of their skins and flattened out on silicone trays to dehydrate. Once done I broke up in pieces that could be ground up in my blender. It worked great. I'll have to try your way now.

Lol. Well, first it took me 3 days to get the filming done. When I finally got to the point of vacuum sealing them, I was so done and just ready to store them away. I do have another request to reconstitute them, so I may do that in another video. Thanks for watching!

I did some today and I hope to include that in a video in the near future. These are certainly not “instant“ mashed potatoes, so they do take about 30-40 minutes to reconstitute, and then blend them more. The purpose of these potatoes is to have them for mid-term storage when we can’t have access to actual potatoes.

Another Great idea and video, Thank You! I wonder if I could do this with sweet potatoes, as white potatoes do not work for me. If you get a chance look up Rain Country’s video where she uses a brake bleeder to vacuum seal, this has worked so much better for me instead of my vacuum sealer. Just a thought. Thank you! I have heard of the brake bleeder but have not used it. I also have dehydrated sweet potatoes. I have left them in slices and also powdered them. I have a jar of powder that I can just make into mashed sweet potatoes at any time, which I really like. They actually grind up much easier than regular potatoes.

This also works great for winter squash and pumpkins. I fit 3 pie pumpkins into a pint jar! Anytime a stew or something needs a bit of thickening, I grab one of my powdered jars. It’s a great way to add veggies into just about anything you cook. Also, I do love the brake bleeder. I like to have non-electric backups whenever I can👍🏻

I bought a brake bleeder and an extra set of jar sealers that I put with my FoodSaver extra supplies. Printed out the how-to instructions for Justin Case. Good to have a backup plan, especially in these days of shortages and such. As for sweet potatoes, the Backpacking Chef channel has great info on dehydrating them. And other foods, as well.

I use both the vacuum sealer and the brake bleeder both seal well.. love this way of doing the potatoes I just bought 10kg to do this and make hash browns 😊 my ASD son is a potato king so we need to prep for him too 😂

Do you HAVE to boil them first? Is it possible to dehydrate them whole and then grind them up? That’s just what assumed I was gonna see. I like the video and the channel but at 1/8 thick, this seems like you’ll be dehydrating for a a week to get a box of instant mashed potatoes.

First, they will turn very brown if not cooked. Also, when rehydrating you want it to hydrate to it's original state, which is mashed potatoes.

I wonder if you would get a flakier result, more like commercially produced potato flakes, if you made your base with much more water and strained very thin layers over silkscreen, the way handmade paper is laid. It probably doesn't make much of a difference once everything is reconstituted and recooked, but thinner flakes would surely be quicker to reconstitute and save on cooking fuel. Another option might be to fully powder the final product, but that might make a weird texture when reconstituted.

You could always try! Thinner is definitely better when trying to make them into small pieces because the product is very hard.

my food sealer (off brand) finally went to heaven and I have to buy a new one, I have own Food Saver brands but they seem not to last long. I will buy one can you can use this attachment. My question is how do they taste?? I do NOT like instant potatoes cause they have a funny taste to them. How do you like them and please be honest! lol which I think you will. thanks for a great video!

You're welcome!! I did rehydrate a serving after I had done this video and it tasted great! Just like the real potatoes they were before. I did have to add more liquid than I thought and it took a bit longer to fully rehydrate. A lot of people have asked for a follow-up video and I plan to do one at some point.

Great video. I've seen a lot of people explain how if you slice your raw potatoes and dehydrate them they turn a very ugly black, because of the excess starch and you need to steam them or cook them to get rid of the excess starch. This was a great video. Thank you for posting it and not telling us all how Jesus is our savior etc. When I watch people cook or prepare food, I don't feel I need to be preached to, unless you want to preach about how wonderful the meal tastes and how much money I saved. I recently bought a bunch of commercially prepared dried foods, I purchased 'Mac & Cheese powder - the yellow powdered cheese', onions flakes, sour cream, butter, honey. I have to wash out my mason jars and vacuum the air out of them for long term storage and also to parcel them up and the containers are kind of large. Especially the butter. It seems I go from having plenty of butter to having none, just when I need some, so I thought, even if the butter is a little weird from being powdered and rehydrated, in cooking it won't make a bit of difference, or even spread on toast under jelly or preserves.

I totally understand. These are not just like the instant flakes-they take a little longer to rehydrate fully, but it's a piece of knowledge, a skill, that can add to a person's self-reliance list.

Take 5 whole potatoes and put them in the refrigerator and let him get cold then Adam to the water boy alone and it set them off to the side let him cool then slice them 1/4 of an inch and later mon the sheets and dry them you can use them for scalloped potatoes and for potato dishes that you add potatoes to when your bacon casseroles

After peeling which you’re doing the right way. I cut them in half length wise then use a mandolin slice 1/8 inch and blanch them, drain them then dehydrate them. You got dehydrated potato flakes. All your flakes will have the same consistency. Then vacuum seal in a mason jar.

I have a Colzer 12 tray and I absolutely love it. If you dehydrate liquid stuff like eggs like I do, make sure you can get the silicone inserts with a lip on it to fit your trays because some dehydrators are too small for them to fit.

Vacuum sealed with a moisture and oxygen absorber in it, easily 5-10 yrs.

After I made that video, I did rehydrate some (and they were very tasty!) but didn't have a chance to film it. A number of people have asked and I have it on my long list of things to get to. Just the lid goes on the jar and the vacuum sealer fits around it. It's amazing how it seals!

With the jar sealer in place, the lid is still loose on the jar. The vacuum pump pulls the air from the jar because the lid is loose. Also pulls the air out from between the lid and the top of the jar sealer. When the vacuum hose is removed, air rushes back into the jar sealer, pushing the lid tightly onto the jar before air can rush into the jar, itself. The lid is held down by the air pressure on the lid because of the vacuum still in the jar. When you open the sealed jar, you can hear the rush of air that finally goes back into the opened jar. Hope this helps.

this looks really practical and yummy. I was thinking of finding something similar to make gratins with them. i like prep that makes cooking quick, convenient with a long shelf life. did you consider steaming the potatoes instead? I was thinking maybe if they stay a bit firmer we could slice them in slightly bigger chunks almost like shredding chunks, it would cook back and give chunky texture in the dish i think, and it could maybe keep longer and be more versatile.

I did not think about steaming them. However, you can do them anyway you would like. I prepare them to be just like mashed when I would rehydrate and not have to work with them.

I like the idea of dehydrating very thinly sliced and parboiled potatoes for use in au gratin recipes. I think it would be easier to get a "perfect" product this way.

I would try to dehydrate without butter or milk. It will lengthen the shelf life of the potato flakes.

Dont throw put your peels! You can deep fry them, season them, and top them with mozza, pop them in the oven long enough to melt the cheese, and dip them in sour cream. Its great!

@@northstarprepsteader they're pretty good. Used to snack on those at the sports bar when I was young. Now it drives me nuts to see people toss em. They'll last in the fridge fresh for a few days if you keep them in water

If you don't have a dehydrator you could probably use an oven and the same temp/ same amount of time (therefore you wouldn't want to do it when it's hot outside, but would help keep ur home warm in the winter!), using cookie sheets lined with parchment paper.

I have all the vacuum equipment but the sealing lid won’t work on the smaller jar lids - only the sealing lid for the wide mouth jars - weird

Do you have two different sizes? If so, check the gasket on the smaller one for the regular sized lids. It could be upsidedown or have a split or something.

The "flakes" are more like hard little pieces ground up and will only rehydrate as mashed-returning to the state they were before dehydrating. You could make fried patties once they're rehydrated but you would not be able to fry them as they are dehydrated. I have no idea or information on sales-this video is provided for home use.

An EXCELLENT video, better than many that are professionally made. Even the low-volume background music wasn't irritating, as most are. I have stage 3 kidney disease and can only eat mashed potatoes if they are double boiled, throwing out the water each time to get rid of the harmful stuff that damages kidneys, and later could force me on dialysis for life. This way I can pre-prepare mashed potatoes that will not over-stress the kidneys. I am 90 years old and had a near-fatal heart attack resulting in massive damage and a 5 part bypass. Your vid might have bought me an extra year or two. Thank you so much.

It takes quite a bit of water and about 20 minutes. They're certainly not instant.

Okay I'm a little confused. Do you have to put an oxygen absorbent in the jar before you vacuum seal it? Or can you vacuum seal without the oxygen absorbent? Or do you even have to vacuum seal these potatoes? Thanks in advance!

In all reality, vacuum sealing should do just fine. Yes you do have to seal it. I like to throw moisture absorbers in there to make sure that they remain dry, and sometimes they throw oxygen absorbers in for good measure, to make sure that they stay sealed. The oxygen absorbers aren’t necessary, but actually just a personal preference.

I have a question,Why can you not just dry the potatoes in whatever form you want,And then as you need them just grind them up in a coffee or grain mill? I grind mine into powder, and use in my sourdough starter And it works well. 😃 r

Adding parsley and other herbs would be delicious! I'm not sure chips will work because you want it to be tasty & smooth mashed potatoes when rehydrated. Usually, you dry the original food. You could always experiment with a small amount!

I don’t have a dehydrator I use my oven for chicken jerky, apples 🍎, strawberries, pears 🍐 are my favorite etc. I never did mashed potato but like you said I can try a small batch 👍 thank you. I don’t know why I didn’t think of that! I just came across your channel and I enjoyed it and subscribed
