We need:
Sugar 200g
Cream 33% 215g
Butter 50g
Salt
Thick-bottomed saucepan
Half of sugar (100g) place in a saucepan and place on low heat.
Do not stir anything with a spoon, roll a saucepan from side to side in your hands.
When almost all the sugar has dissolved, add the second half.
Again, don't stir anything with a spoon.
When all the sugar has dissolved, add the butter. Mix well with a spatula.
Add HOT cream.
Mix carefully, there may be splashes.
If you want salted caramel, add 0.5 teaspoon of salt.
Cook over low heat for another 6-8 minutes.
Keep refrigerated.
