Homemade Tea Cakes Recipe! Crunchy Biscuit, Chewy Marshmallow Chocolate | Cupcake Jemma Channel

Tea time treats don't get better than this. These Tea Cakes may look small but they sure are mighty! They have every texture and flavour needed to create the perfect treat; Melt in the mouth buttery Shortbread biscuits, topped with bouncy light Marshmallow enrobed in perfectly tempered snappy dark Chocolate. YUM!
If you have a silicone mould you will be able to get a beautifully smooth finish on your Tea Cakes but don't worry it's not essential, you can pipe your Mallow directly on top on the Shortbread and they drizzle or dunk them in the melted Chocolate.

For the Shortbread
Preheat Oven to 170C (fan assisted)
75g Softened unsalted Butter
30g Caster Sugar
115g Plan Flour
1/2 tsp Salt
1/2 tsp Vanilla Extract
For the Marshmallow
12g Powdered Gelatine
60ml + 30ml Water
90g + 90g Glucose Syrup
75g Caster Sugar
1 tsp Vanilla Extract
For the Chocolate
500g good quality Chocolate

we buy these at the supermarkets here in New Zealand, we call them Mallowpuffs...and the tag line is "have you done enough for a mallowpuff?". I've been making them at home for years, sometime I put raspberry jam or caramel sauce on the middle of the marshmallow before putting the biscuit on, sometimes I make flavoured marshmallow. Sometimes I luster dust the inside of the mould before I do the chocolate, and other times I make white chocolate ones. They are so much fun to make, especially if the grandkids want to help. Yours look and sound amazing!

We have a few similar store-bought cookies in the U.S. and Canada. One made by Nabisco called Mallomar which only comes out I think towards the end of November. That's only because the chocolate they use melt easy in the warmer months. The other cookie is called a Dare Whippet which is made in Quebec Canada but also available in the as well. They offer a raspberry filled version and theirs is available all year round.

Made these today with four leaves of gelatine instead of powder, just soak them and add to the mixture before the syrup. Still turned out great, thanks for this awesome recipe! x

In Canada we have Whippets which are basically that but commercially produced and found in all major grocery stores. Use to love these as a kid. I have to say your version probably taste much better and that chocolate snap is amazing!

I can temper chocolate.. taught myself to make chocolates and I have made marshmallow and biscuits.. but I’ve never made a construction like this.. so might put some pink in the marshmallow .. but great video 👍🏼🐨🇦🇺. Lovely clear instructions and great personality !!

We have something almost the same here in Australia you can by in the shops. There called royals to only difference is a very thin layer of jam. I always wondered how they were made and now I know I will give them a go one day.

Hahaha my husband introduced the German version, Schokokuss, of these to me 6 months ago. I didn't know there was a British counter part 😂 These definitely look tasty with the shortbread cookie. The version I tried had a waffle like cookie

Thanks for this! I've been trying to make this in the past but I was doing it incorrectly by putting the mallows directly to the mold and end up with a sticky mess. Now I just need to try tempering the chocolate.

Love this recipe yummmmmmm!!! Can you do a recipe for marshmallow fluff - the much softer version of marshmallow similar to the centres of walnut whips. (Gosh that is a blast from the past.) Or snowballs. Yummmmmmm!!!🥰🥰🥰🥰🥰

I love them too Phil, that is why would love to make them. Believe marshmallow fluff is freezable so could then make them as needed. Which would most probably be every day!!! 😂😂😂😂

In South Africa they have a wafer at the bottom and are called Cutie Pies In Israel they’ve got biscuits and are called Crembo - they only sell them in stores in winter cause it gets so hot in summer!

Cornflake tart, its a pastry base with jam and then the cornflakes are mixed with melted butter and i think syrup... then you bake it. I remember them at school many years ago 😊

You can use agar agar or carrageenan instead of gelatine to make it veggie friendly. Not sure about the ratio though.

Thanks both! Yeah I worked as a pastry chef in a hotel for a year or so, so worked with Pectin, Agar Agar, Xanthan Gum, and other stabilisers; unfortunately with stabilisers they all work in different ways so it’s hard to just replace them as they all activate in different ways and have different results! Will have to do some experimenting, maybe just try a stiffer meringue? 🤔🤷‍♀️

Where do you get your silicone mould from, all the ones I can find are very floppy and I can't see how you can rotate them around without getting in a right mess!

You can use light corn syrup instead, one to one ratio. Light corn syrup is a little more watery but not enough to affect the marshmallow outcome :)

A spread of jam and you have Chocolate Royals :) You didn't show removing them from the tray. Is this why it would be better to use silicone and not metal baking trays?
