Homemade Turkey Soup Recipe

Note: I used the carcass of a 24 pound turkey which made A LOT of broth. If you have a smaller turkey use less spices and veggies!
Put turkey carcass in a large pot and cover with water. Bring to a boil and then simmer for 5-6 hours.
Drain turkey broth into a bowl and save bones and meat to pick the turkey off for your soup.
Place broth back in the pot. Bring to a simmer and add:
3 bay leaves
3 tsp thyme
3 tsp basil
3 tsp parsley
2 tsp poultry seasoning
2 tsp salt
2 tsp black pepper
1 large onion (chopped)
5 large carrots (chopped)
4 pieces of celery (chopped)
shredded turkey
Simmer for 1 - 1/2 hours until carrots are tender.
To thicken mix together:
4 TBS flour
1 cup cold water
Add to soup and stir for 2 -3 minutes.
Taste and add salt & pepper to your taste!
Enjoy!

That looks really good! I just finished picking through the turkey we had finished for the holiday and thought what a shame it looks like so much is still going to waste that I couldn't get off the bone so the next time I have one we're going to use your recipe! Thank you for posting!!!

This is so helpful. Thank you. I am making it this way and I want to put potatoes in it. Is that perfectly acceptable and can I still freeze it with the potatoes in it?

You're welcome Don! I would not freeze it with the potatoes in it....the potatoes tend to get "grainy" when frozen. I would separate the part you are going to eat and add the potatoes (or noodles) to just that amount. Hope this helps! Thanks for watching!

Dominic ~ That will be a lot of turkey for soup. I wouldn't use all the turkey meat from a whole turkey. I always freeze some of the soup for a cold winter day! I hope you love it! Thanks for watching!

That's basically how I make my turkey soup with one tiny difference. I use 1 can of Cream of Mushroom Soup for thickening.

Marilyn, Yes I do add noodles but if I'm making a big batch to freeze I wait until we are ready to use it to add the noodles. I have found that the noodles do not freeze well in this soup. Thank you for commenting and watching! It is very much appreciated!

The turkey has been cooked. The carcass (bones, skin, excess meat) needs to simmer for 5 hours (or even longer) to make a good stock for your soup. Please let me know if you have any other questions! Thank you for watching! Happy Holidays!

You didn’t say how many cups of broth is in the soup recipe.

I use all of the broth from simmering my turkey. I would say 12-14 cups at least..BUT I make a big batch and freeze most of it. Depending on how much you want you can adjust the other ingredients to how much broth you use. Seasonings are to taste...some people like less seasoning, some more. I used this recipe but I found that 3 tsp of all the spices was way too much. I sifted out a lot of it. Otherwise it was very good. Thanks.

You're welcome! The amount of spices depends on how much broth you have. I use all the broth from a large turkey in my soup and freeze most of it. @@lindajohnson5782 If you have 4-6 cups of broth I would only add 1 - 1/2 tsps of each spice. Hope this helps!

I should have known better than to use 2 tsp. black pepper, but I followed the recipe. BIG mistake, way too peppery for my taste. Ruined the whole pot in my opinion. Should have stuck to one tsp. only. Never again.

A trick I found out when I put too much pepper in a soup, I froze it anyway not to waste it and when you defrost it awhile l;ater, the pepper was not strong like before I froze it
