Upside down puff pastry recipes have been a real trend lately. I like to make them because they’re one of those things that are actually very easy to make, they just look complicated. Once you get to know the method it’s very easy to figure out how to make lots of variations with different flavors. Sometimes I make them sweet, other times I make them savory. Today I’m doing both and making a Honey Brie & Sour Cherry Puff Pastry. It’s both savory and sweet and can be used as a light snack, appetizer, or dessert.
In a way this reminds me of a cheese danish. Brie is a mild, creamy cheese and it pairs beautifully with the sour cherry flavors and honey drizzle. I love that it’s just a little savory without being over-the-top. In this version I use sour cherry preserves, but you can use raspberry preserves or almost any other red berry flavor. I like the way the fruit and cheese compliment each other. The honey is simply used as a sweet drizzle at the end to tie it all together.
A few notes about working with puff pastry. I always use frozen puff pastry because making it myself is far too difficult. When working with it, work quickly. When it gets too soft it’s really hard to work with and gets too mushy. I make sure the surface I’m using is very well floured so it doesn’t stick to anything. Then, we get the pastries assembled and into the oven as expediently as possible. These definitely taste the best when they’re freshly baked and the cheese is melted so be sure to get them right out and onto the serving platter when they’re ready. That’s when everyone will want to eat them up!
