May I ask, why don't you have the rotation of the belt moving away from you otherwise you are continually working over the top of the belt with an elbow over the top of a moving belt. Also while standing in front of the downward rotating belt it will have the potential to want to grab your knife blade due to a heartbeat of inattention or distraction, not criticising you just an observation at the way the system was originally set up and you have adapted to it, overall great work and thank you.
