that fryer oil needs changing badly! when it foams like that that oil is broken down pretty badly! in my experience it is very close to being burnt oil!
We taste test throughout every shift! We would never send out Fries with over used oil. Customers would never come back. Im sure with your experience you would recognize there is a fine line between good and bad oil affecting the final product.
