This is an everyday stir-fry. Vendakkai Poriyal is a great side dish for lunch. Ladies finger / Okra done the right way can be delicious. This is a simple South Indian preparation where the Vendakkai poriyal is made with basic ingredients that most Indian kitchens do have. Here is how to do it in Hotel Style.
Ingredients
Urad Dal/ உளுந்த பருப்பு - 1 Cup
Gram Dal/ கடலை பரப்பு - ½ Cup
Dry Chilli/ காய்ந்த மிளகாய் - 10
Pepper / மிளகு - 1 TSP
Coriander/ தனியா - ¼ Cup
Lady’s finger/ வெண்டைக்காய் - 250 GMS
Cashew Nut/ முந்திரி - 12 to 15
Onion/ வெங்காயம் - 1 TSP
Chilli Powder/ மிளகாய் தூள் - ¼ TSP
Coriander Powder/ தனியா தூள் - ¼ TSP
Turmeric Powder/ மஞ்சள் தூள் - A Pinch
Salt/ உப்பு - To Taste
