If you are referring to canned anchovies, I do not recommend you use them for Japanese noodle dishes like this one. You can use dried anchovies or Japanese soup stock if you cannot find dried sardines. Good luck! :)
Dried sardines of good quality are shiny :) Brown sardines are old and they are not good for taking dash stock. How about using bonito and kombu dash stock powders? If they are not available, you might have to use chicken or beef.

Both. Removing the foam will make a clear broth but it also improves the flavor and gives dishes a cleaner more refined taste. The foam is usually fat or coagulated protein that floats to the top and if you don't skim it off it can mix with the broth and make it cloudy.
I had a taxi driver in fujiyoshida take me to a hoto restaurant one night as everything in my area that i was staying was closed. It was a lovely store with a nice old man who cooked my food. Before I discovered CWD, my definition of cooking was to remove the outer packages, pierce film several times, tuck it into the microwave and wait for the ping. But after years of drooling at your videos, I have gradually learnt how to cook. Naturally, my eating habit is now more healthy (btw, I made Gyudon for dinner last night, using your recipe and it turned out so good I'm so proud of myself lol). Thank you for the inspiration and for making me discover the simple joy of cooking :)

I made this dish for my family tonight and it got rave reviews! The only thing was, I couldn't find aburaage, so I just substituted regular tofu instead, and I used spaghetti noodles because I forgot to buy udon when I went shopping. すごくおいしかったです。レシピをどうもありがとう!
4 of us in our family ordered Houtou Udon when we visited Yamanashi-ken. We did not know Houtou was an everyday dish in this area. It was served in a cast iron pot, really hot but very satisfying.
This looks really delicious. There are so many good recipes that you've shared with us that it can be difficult to pick which one to try. I did try "Ninjin Shiri Shiri" and it was amazing. Since this one doesn't use any meat, I feel like it might be easier to make.

Bok choy, mizuna or boiled spinach can be used instead of the komatsuna spinach :) Any leafy vegetables that have a mild flavor are suitable for this recipe.

No, houtou is a unique type of noodle that is only found in Yamanashi prefecture. Its sort of like flattened udon noodles. Its very difficult to find houtou in other areas of Japan.
