I love Lucas. Honestly one of my favorite food hosts. He's so respectful, educated, and well spoken in the Eater videos I've seen, especially when they are about an unfamiliar cuisine, his decency is on display in how he navigates it and the culture its from. Also, his moment with the kid...my ovaries may never recover.

The way Lucas describes the food is absolutely perfect. As a professional cook, those are the exact type of descriptor words that we would all love our servers to use because they can truly make one salivate and satiate for something of that nature. The only way to be able to do what Lucas does is to 1) eat lots and try everything and 2) do some actual research on cuisine/cultures and not just base your food knowledge off of which hype restaurants you've eaten at (which Lucas clearly does as he hosts ... Dining on a Dime heh).

I love how respectful and educated on the culture he is. This is a platform to reach out to so many people who want to learn more about Hawaii and its cuisine; unfortunately, a lot of the times it is misrepresented by people who butcher the language and/or traditions or rudely critique the food and think it's funny.

As much as I enjoy watching this series because of Lucas' character and personality. What really gets me is his knowledge in food and how he's able to reference to other cultures of food so well. I'm curious to know how much of this is scripted and if isn't at all, what his culinary background is.

In the Philippines, we have a native dish in the province of Bicol called "Laing" which is basically stewed taro leaves with pork and coconut milk seasoned with "Bagoong" (shrimp paste).

Lucas, your specific comment about not treating poi as a fetish while at the same time acknowledging its prominence, was quite insightful. Where i am from 8n the Caribbean..we call taro.. dasheen..we boil the roots and make a dish with the young leaves called callaloo..really delish..

That beef and squid luau is like what we call callaloo in Trinidad & Tobago. There's ochro in ours but it's pretty much the same from the recipes I've seen. That's so cool.

Chicken Long rice is actually a Chinese influenced dish that dates to the 19th century. Native Hawaiians didnt have rice or noodles. Also Lomi Salmon is most likely a 19th-20th century dish. There are no salmon in the waters of Hawaii (too warm), Tomato is a New World plant, didnt grow in Hawaii until Western contact. Everything else looks legit.
