How Community Chefs Feed 4,000 People During Ramadan In Egypt | Big Batches | Insider Food

For nine years, the neighborhood of El Matareya in Cairo, Egypt, has been hosting one of Egypt's largest iftars, the evening meal eaten to break the fast during Ramadan.
On the 15th day of Ramadan, 200 volunteers from El Matareya help cook the food in the streets and in their homes.
In the streets, chicken and rice are cooked on grills, and in homes, dishes like mahshi and kebab halla are made by hand.
All of the food is served on 500 tables that stretch a kilometer down the road.
The event has become so popular that people from other neighborhoods stop by to enjoy the festivities and get a free meal.

Um is not her first name, it's more of a honorific title given to her on the count of her first born child Mustafa, so Um Mustafa in shorts means "Mother of Mustafa ".

Well, coming from a muslim who prepares the food for iftar for their family, when you're preparing it you don't really notice the hunger. Really the only unfortunate thing is not being able to taste the food as you prepare it, and being unsure whether it tastes good. so you really need to know the recipes by heart. Actually that goes for all activities. When you're fasting you don't really notice the hunger unless you're not doing anything. Aside from fasting, ramadhan is a time for prayer, reflection, family, and charity, so if you're practicing it fully there's really no time or chance to feel the hunger.

@@devendarjain7037 no the rice usually isn't boiled, the put it after turning off the fire. Mahashi is delicious and it deserve the hype if made right. you need to try it and the koshari I know they don't sound amazing but good ones are. there is many versions of Mahashi in Egypt and. many other countries I personally prefer my grandmother Mahashi.

I love that when Umm is making the stuffing for the vegetables, she says that she doesn't add too many chilis as some people don't like it spicy and she doesn't want to hurt them. She is such a considerate soul and I hope she is doing good :D

I’m not Muslim so I don’t know if it would be allowed (or appropriate) but when the chef commented that the hardest part was making the meal while fasting because he isn’t able to taste it. My immediate thought was what if they had a member of a different religious community taste the food as it is cooked so the chefs are able to make sure it is properly seasoned. As I mentioned before I am not Muslim and I know very little about what goes into meal preparation for breaking the fast for Ramadan, so this idea is from an outsider perspective.

Its actually permissible to taste the food while fasting. Just need to use tip of tongue and don't swallow the food. Also rinse your mouth afterwards.

my family let my diabetic brother taste the food(as some people with health condition are forbidden from fasting), and kids and women in there period don't fast. its easy to find someone to taste the food.

Christians have the privilege to ask for asylum in European and North America’s countries, and therefore they go for it. I am muslim and I have nothing but love for my Christian brothers and sisters.

the middle east is too large to use such a blanket statement, but anyway no house helpers aren't that common in egypt and people usually do cook their own food except maybe the wealthier folks but they make up a really small percentage of the population

Just to clearfy, who making mahshe (stuffed vigtables), that is not her real name, just like a nick name, the nick name is um mustafa which mean (mom of Mustafa) which usually woman in Egypt be called with (mom of her child name) as in Egypt traditionally somehow hiding the mother names

If you film next to a government or a security building, the will make your life difficult. Otherwise, they don't care. From a personal experience.
