Licorice is a candy made from the licorice root known for its salty taste and deep black color. It's a popular treat in Scandinavian countries. We visited the factory for Lakrids by Johan Bülow in Copenhagen, where 330 pounds of licorice are churned out per hour, and saw just how the treat is made.

Last year I was unfortunately part of a team who shut down the largest and one of the oldest licorice processing plants in the world. The plant started producing in the late 1800s and at its peak produced enough annual product to supply the entire world in liquor, powder and confection grade. The plant was a sight to see which was built and expanded over 3 generations in Camden, NJ. However the downturn in tobacco sales and cost to support old technology and such a large facility it came to its end. Being so fascinated with entire operation, it's history and learning about the extraction process is what lead me here. After all I love licorice too.

Agreed, personally I've found some decent ones, but they only come in a mixed bag of 50/50 salty and sweet, so what I do is separate them and then add a bunch of ammonium chloride to the sweet ones. It took me a couple of tries before I found out how to do it, but just in case you'd like to try the same, here's the process: For this recipe, you'll need about 125 grams of licorice and two teaspoons of ammonium chloride. First, you find a small microwaveable container, I use a round Tupperware container, step two is dumping the licorice in and then pouring water on until all the contents are soaked. If you leave out the wetting process, you'll end up burning the licorice, and although it is still edible, I prefer my licorice unburned. Next, you heat the licorice for 10 seconds on high power in a microwave oven, and then give it a stir with a teaspoon or similar. Repeat this process until all the licorice has taken on a tar-like nature, it's a bloody hell stirring at this point, and I'd recommend a teaspoon with a good thick handle. It should take some 10-15 repetitions. When everything is a sticky mess, you mix in the ammonium chloride, and the licorice will become a somewhat lighter color, possibly because you trap a lot of air in the mix. When that's done, you wait until the mass is cool enough not to burn you too badly, and then dig out the licorice with the spoon. In the beginning, I rolled the licorice into musket-ball sized balls, but found out it's faster to just spread it out in a layer on a piece of baking paper, and then cut the whole thing into chunks when it's cooled a bit more. Expect the knife to stick. The last step is dumping the licorice, one by one into a bag of ammonium chloride, and shaking it, to prevent the licorice from sticking together in a big lump. With all that ammonium chloride you get an initial kick in the gob, and think "maybe I overdid this, I wonder if my stomach will survive", but then it sort of wears off a bit and becomes the most delicious and soft licorice, you could use to strip the paint off of a car door at 400 paces, or for cutting armored glass.:-)

@@tomatoessuck4878 late reply, but Finland is indeed known for its good licorice, I think we have good licorice in Denmark too but I guess I'm biased. I would recommend super piratos, they're a popular choice here

Food insider is (again) wrong about this. It's not salty in it's purest form. In Nordic countries it's often flavored with salmiak salt and / or table salt (along with anise extract and other flavorings).

I have always liked black licorice and one day I was given a bag of Icelandic lakrids . I didn't expect them to be slightly salty but I liked them as well. Most people l know don't like black licorice. Another favorite licorice of mine is All sorts from the UK. It's the one that has a man on the package made out of the licorice pieces.

My Finnish friend introduced me to Licorice. I hated it at first, and as I tried another bite, and a day later another piece... I've grown to somehow like it. But it's not something I would look for, but if someone offers, I would gladly eat it.

The first time I tried it as a young child I thought it was going to taste like dark chocolate. The best way I can describe the flavor is bittersweet and tastes like cough medicine. Despite that I find myself snacking on it from time to time when I get bored of the artificial taste of redvines.

Mmmm, Lakrids By Bülow (Licorice By Bülow) - Coming from a native Swede/Dane who absolutely LOVES salty black licorice, especially when it’s covered in chocolate, and coated with salmiakki powder ☺️🙈 These are soft black licorice, and not necessarily salty, but still addictive af 🙈

Maybe try to get your hands on some Danish Ga-Jol, I'd recommend the yellow version. Also, Finnish Fazer makes a licorice called Salmiakki, that would definitely be worth trying as well. Oh, and another good Finnish licorice for us who like a bit of a kick to it, is the Sisu. Happy hunting.:-)

The licorice is actually made out of the licorice root or anis seed to get a licorice flavor candy and sometimes they use both of them to get a very good licorice flavor and two different black colors too, by the way 🙂😎✌️

It doesn't necessarily, some are nauseatingly sweet, while others are so deliciously full om ammonium chloride it brings tears to your eyes. You know, as an involuntary and autonomous response because it feels like you're eating CS gas in solid form.:-)

I'm anxious to try some quality licorice candy. I was turned off of licorice gummy candy made in the U.S., which isn't good-tasting! I know there are many different licorice candies made in Europe. It's hard to find in the stores here, I'm guessing ordering online is the best option.

That's right! The Greek name for liquorice is 'Glycyrrhiza glabra', which means 'the sweet root'. This name is no understatement because in its natural state the liquorice root is 30-50 times sweeter than plain sugar 🖤
