Suffolk black ham gets its black crust from its curing process, using molasses, brown sugar, and a local black porter. Soaking the ham in this sweet marinade doesn't just turn it black; it helps balance the flavors of the ham and breaks away from the salty flavors of hams that are dry-cured using only salt. The whole process takes 10 weeks, in which the ham is first dry-cured, then marinated, and then smoked. We visited Emmett's in Suffolk, England, where the ham has been made for 200 years.

I have been a butcher for 26 yrs and and we process hanging beef, all exotics, bison and of course hogs. The pork we do, whether it's hams, bacon, or breakfast sausage is far above in quality and taste what you can buy at your grocer. I'm proud of my trade, and my skills. We are a dying breed.

Unfortunately you're right. Due to modernization the art of butchery is almost fading away. But I know that a few will always remain. I for one don't like meat from supermarkets. I prefer the old ways of the butcher. Nothing and I mean nothing will ever replace the magic touch of a butcher shop.

@@jb76489 I was thinking more traditional, Sunday roast with Yorkshire pudding, Stargazy pie, Lancashire hot pot, Suffolk black ham with some Shropshire blue washed down with locally made farm cider, etc, i could go on for pages, i suppose it depends on what you were given as a child, i can defend you here because most other countries have their equivalent to beans on toast, well made fish & chips are fantastic.

I’ve lived rurally in the UK all my life, and your comment made me stop and come to the same realisation, then make me wonder how I hadn’t come to the same conclusion before. It’s so true!! Although the whole island is only around the size of California, there are so many traditional foods, created in isolation - often over centuries - before the modern world opened us all up and connected everyone together to share them. Even in some cases from town to town. From what I’ve tasted and experienced so far, it’s really worth exploring if you ever make it over :)

yeah man england is like a patchwork quilt of quirky local traditions. lived here all my life and I still learn about new ones now and then. I grew up in the countryside and we did all kinds of stuff like a plum festival, dragon boat racing on the river, mayday celebrations etc. it's full of folklore and strange stories of local people, bits and pieces of buildings that span through centuries in a single place. where I live now doesn't have so much of that sort of thing so I do miss it sometimes. the countryside is rich with this kind of magic if you go looking for it, the modern world sort of obscures it but it's still there.

Similar to "country ham" in the Southern US. Cured for three months, some are salty and some are sweet depending on the region, and most are hickory smoked after curing.

I come from one of those regions where "country ham" means "pork-based salt lick", and I still have a hard time eating sweet ham to this day lol. the ham I grew up eating for breakfast was like a ship's ration.

His point about why the ham marinade is so sweet and so strong is really understated. Salt pork or other cured meats were so salty that many recipes of the era call for you to wash or soak your meats for hours to help pull some of the salinity out. This is that same process but also using things often seen as byproduct like molasses to help flavor the meat to take away from that saltiness

They feels weird. I’ve spent years and years dribbling over our beautiful European neighbour’s food and culture and I’ve stumbled across 3 for England. Couldn’t believe it. Love Claudia also. My favourite is those Italian black hams that live off acorns. Looks so so good

@@AndreaMelk92 I'm 31 🤣 I guess this shop is the only place that sells it as it's not a huge thing in Suffolk definitely not in the dead ass town I come from lol I regularly buy meat from local butchers but never seen or heard of it, its probably a class thing more middle class people probably heard of it, I'm from the rougher parts of England lol, feel like Turkey products more linked with Suffolk/Norfolk (I live on the border of both) because of bernard Mathews lol

1:30 Just a correction on why hands and feet winkle when exposed to water. It's actually a reaction to help gripping things in wet environments and is activated by the autonomic nervous system. If the nerve to your finger or toe were severed, the pruning action would fail to function on that appendage.

@@ugiboogy1111 indeed you're quite right. The water in the bath tub would enter the cells and burst some after swelling. However after looking into it, the OP was right in that it is an autonomic response which shunts blood away from the periphery in a process called 'pruning'

This seems similar to a BRADENHAM HAM, which came from THE WEST COUNTRY. I haven't seen one for 30+ years. But it is vwry difficult to get REAL ham in England now. In fact it is easier to get Parma ham, or Iberoan ham, tgan it is to get real Emglish hams. I shall make a pilgramage to Suffolk to find these gems.

It's quite clear from the stress that he was going to say something like "much blacker than you ... usually see" but for some reason got distracted and abandoned the sentence. There was no stress on 'you' so he was NOT comparing the molasses to Claudia.

You can serve as it is (cooked but cold) with cheese and bread etc. You could serve it hot after a quick pan fry. Or dice it and use in things like you would any ham. Personally, pan fried quickly served with fried eggs and chips
