There’s not enough videos about being a pastry chef and our industry! It was really interesting to hear about your experience. Especially because I go to a culinary school in the UK and actually it sounds very similar to the CIA!

I have some similar experiences with getting baking jobs, walked in, have to my resume and they asked when I could start. I wish I could stay in the industry forever.

Pretty sure I'm at least 15 years older than you but I became "the" Pastry chef today! Years in the making and I feel a little in over my head but I'm excited for the opportunity to learn and grow! I'm learning from you my young friend! 😬😎

i agree with you that getting a boh job can fast track you, you learn from other chefs in the company. when i worked for the catering companies, i was a prep chef for most of the time, then got sous chef roles and during high end events, they sent me out to be front chef.

Congratulations on making Junior sous chef!!!! I just completed culinary school 6 months ago and my goal is to be junior sous chef. i don't want to be head chef. head chef too much admin work. LOL!!!

Thank you for the video, it is super insightful. Ive always wanted to open my own bakery in the future but my parents wants me to go to a regular college first. Ive been looking into CIA for a while and actually had a friend that graduated there with a pastry degree. Just a side note, no offense or anything but throughout the entire video the way you talk i keep thinking you were about to cry so many times, haha.

I went to culinary school in Australia and my experience is very similar to this. I completed it last year and it was also the best 18 months of my life as well. It was so much fun! I am now working as a chef in a fine dining and work isn't as much fun as culinary school. We didn't get any breaks at all cos ours straight for 8 hours and the culinary school is also very strict. you get sent home if out of uniform and if you fail 1 practical class. you have to re-do the entire unit which changes every 3 weeks as well. my experience with culinary school is very similar to yours.

Enjoyed the video! It's still so silly for me that there is a way to study culinary education, which is not the case in germany. The concept is quite interessting though given that you probably learn a lot of indeph stuff compared to the apprenticeship-system in germany 😄 Have you ever though about doing videos where you show of the process of developing dishes? I feel like this might be quite interessting for a lot of people 😁

Hi! New subscriber here and I just wanna share that we are at the same age and I also wanted to be a chef when I was a kid. Unfortunately, here in the Philippines, only the privileged can choose this type of course. I ended up having a diploma in engineering. Still planning to take culinary with my own money someday!

have u tried the ccsf pastry program? is the vocational school that you went called job corps at treasure island? i got hired for a catering company in sf without any experience, through my sister she was a server. i learned so much, then i got hired by a few high end catering companies in sf, one had several michellin chefs... learned a lot. then covid hit, lost my jobs and been back to ccsf and switching careers to IT.

I am from Berkshire county MA (Western side of the state) and have been baking and decorating since I was about 8. I am in my early 40’s, have a family and am not really in a position to go to pastry school. We have a fantastic patisserie in town that would be a great place to intern. I am craving a career change... desperately

I don't believe you need experience anymore. It was a requirement when I applied but I'm pretty sure they changed the rules!

depends on country. in my country in Australia. the shortest course is 12 months and that is for the basic bakery stuff like to work in a bakery. you make bread, sourdough etc. For pastry which includes things like cake decorating etc... it's 18-24 months to complete. same with chef course. it's 18 months.

It's very tiring. I have a one-hour break where I can sit but other than that I'm standing for 10-12 hours a day. That being said, I love my career and I personally think it's worth it!

Yes you can get a bachelors of applied sciences. The only downside is that some corporate jobs that require a bachelors degree do not consider them.

You go to culinary school, or not, and pastry chef is an entry level job

@@OneRichMofo Pastry chef is not an entry level job. A cook would be entry level. Pastry has pretty much the same tiers as a savory chef. Some places even have levels to cooks. When I worked at a 5-star resort, there were Cooks 1, 2, 3, and 4, as well as a Sous Chef and and Executive Chef. Some places have a Pastry Chef de Partie or a Pastry Chef de Cuisine. I started as a cook and got promoted into my position.

Hey there! Like any career path, you'd have to be good at what you do to move up in the ranks. But passion and drive go a long way as well. I'd start with researching schools if you're interested in that or apply to a bakery to learn the basic techniques you need to begin your journey. Good luck!

I believe my time at school was more than worth it and I plan on opening my own business someday! However, many successful chefs didn't go to school so it's definitely not necessary!

What would happen if you wanted to work in the front doing bar work or waitressing? What would you do then? I don’t know how it works in America because I’m from the UK

thats easy in usa, you start as foh and connect with your coworkers. i live in the same city as the youtuber. my sister was a foh for a catering company, she didnt have any exp in the field and got the job through a friend, she recommended me to join the company because they were hiring prep cooks, i had no experience. she started as foh server, then captain, this company that we used to work also had licenses to work at concert venues, in there she got the opportunity to work at the bar (people with no exp, starts off as beer pourer then barter tender) i also did this for music festival. no experience, i stayed as beer pourer because i didnt like dealing with customers. we got minimum wage + tips for music festival/concert gigs. it was like $15/$16hr + tip, the tips are pretty good. each booth get their own cash tips, like we all split at the end of the night while credit card tips would be divided when we get our paycheck. a bad night, we get like $100 in tips each, a good night is like $200. but since uk is not based on tips, idk whats like over there

yes of course! it won't happen over night but start applying at kitchen jobs and be straight up with them saying you want to get into the industry. If you have been baking at home is a plus. most likely someone will hire you and they can start training you, especially right now there is probably lots of kitchen jobs. Work hard, practice on your techniques, master recipes and over time you can become a pastry chef

yes but it will take longer. there are several ways. Longest route but easiest way is starting out as a dishie at a restaurant. you will get more respect from other chefs starting out as a dishie. 2nd way is to get a part time job at a large chain bakery. like at donut king or something like that. 3rd way is by culinary school
