HOW I EAT HEALTHY FOR CHEAP - Get It ALL Done!👏🏻 Grocery Haul, Food Prep + Meal Ideas/Meal Plan 📝

Here's my meal plan for the next 3 days:
-Breakfast:
oats with protein
protein bars (see recipe below)
Snack:
protein bars
yogurt bowl
smoothies
Lunch:
roasted tofu with broccoli
wedge salads
*left overs
Dinners (not shown)
enchiladas with rice
taco bake with corn bread
RECIPES:
Banana bread protein bars:
-2 ripe bananas
-1/4 cup nut butter
-1 1/2 cups quick oats
-3 scoops protein powder
(My favorite protein powders:
-plant based: amzn.to/4bbTNcq
-whey: amzn.to/49Uj8X1
-splash of milk to help consistency
Mix all ingredients together, add to a 9x9 baking dish that's been sprayed with cooking spray or that is nonstick
Bake at 350 for 20-25 minutes or until firm
I like to store mine in the fridge and eat them cold!
Enchiladas:
-10 flour tortillas
-1 can black beans
-1 can rotel
-1 can corn
-1 cup cheese
-1 can enchilada sauce (any)
*add black beans, (drained) corn and rotel to a bowl, mix than add evenly into tortillas
Roll tortillas, add to a 9x13 baking dish pour enchilada sauce over the top than add cheese
Bake at 350 for 15-18 minutes
Taco Bake:
-2 cups cooked lentils
-1 can rotel
-1 can corn
-3 tbsp taco seasoning
-1 cup shredded lettuce
-1/2 cup chopped tomatoes
-1 cup cheese
*add lentils, rotel and corn to a 9x9 baking dish, cover with cheese and bake at 350 degrees for 12-15 minutes
Remove from oven and top with tomatoes and lettuce
**I served my taco bake with a side of corn bread muffins, you can also add the corn bread to the top of the bake and bake it all together!

I absolutely LOVE those cilantro lime rice packs, but I just noticed how much sodium was in them last night when we ate it for dinner. I'm thinking I will make some plain rice and mix half and half when I eat it next time.

Great video! I’ve watched you for quite a while now and use so many of your recipes on a regular basis. I make many of your oat recipes and tofu recipes. Definitely going to try these oat bars! You can take peanut butter , yogurt and fruit roll it up and make a breakfast burrito. Its so good.

I am going to share the oddest craving I had with one of my children. I only wanted to eat and craved the inside of carrots that little circle when u cut one in half. I would shave to that part then eat it. TO me it was the only sweet part and the rest had a bitter taste. IDK hormones I suppose thankfully carrots these days just taste like carrots no matter which part I eat lol

Nope! I eat what I want / what I can. I’m not someone who’s super into ingredient / label reading because I think it leads to a very unhealthy relationship with food
