a smart baker would measure and not just by taste if it's going to be for sale to make it consistent, different if just for family and friends. There is a reason why McDonald even though i dont like them keep their recipe secret among many other restaurants.

It would be best to find a store that sells Filipino-style "dried fish" like "Tuyo". Those salted dried fish is the perfect combination for your "Champorado". The saltiness of the fish matches the sweetness of the chocolate rice.

They have lots of dried and smoked fish in Russia. And they are so good. Not salty unlike Pinoy dried fish has too much salt. How did I know? In our neighborhood here in Toronto, we have a European market with mostly Russian and Ukranian products, even the staff are mostly Russians. I really love their smoked fish.

Amazing😊 you and the rest of your family have undertaken in learning to cook the Filipino dishes😊 when I was a kid, my parents used to prepare champorado, Hershey's cocoa and add milk and sugar once the champorado is cooked😊 chicken afritada, with plenty of potato's, bell pepper and carrots is a sure winner... I was happy to see your mom cooking champorado. That is my favorite, esp when the temperature here in TX is freezing. In the Phil, Pinoys usually pair dried salty fish with champorado but not us here in TX. We love to eat champorado with crispy bacon. Try it and you will love it.
