I miss the Brent and Ben content! Great stuff. Really deserves some sort of award for the genuine enthusiasm and playful experimentation with all the wonderful guests and cooking styles. Nice work to all involved.

the marrow bone pie is just a steak and ale/stout pie with marrow bone, you can get that in any good pub and pie shop in Ireland and the UK.

of course beef works in a pie...theres a reason its a staple in the UK, Australia & New Zealand lol. We used to have a fastfood chain in NZ called Georgie Pie, whos staple was minced steak and cheese pies.

A very interesting and delicious video. In my opinion, lard makes the best pie crust! In England, we have a steak and kidney pudding which is a suet crust that is steamed instead of baked. If you like a rich beef flavour accompanied by the best thick gravy, you should give it a try. Check out a recipe or two online. My grandmother used to make a steak and oyster pudding which was out of this World. Cheers, Colin.

I once made an apple and banger sausage pie, with a cheddar cheese crumble top. Basically a cheese plate made into a pie.

meet pies were made so that meals (like they were talking) about could be put in a pastry (individual small pies)and go with the men to the mines and shipyards

It was my understanding that in pre colonial times, the pie crust was more of a vessel for meats and was not meant to be eaten. So people would buy a meat pie for the road, crack it open and just throw away the crust once they had eaten. Unlike modern meat pies that are often steamed and meant to be eaten whole

@@vc8538 some pies are steamed xD I meat, we usually call it suet pudding (with different fillings) but they're shaped like and have the basic function of pies

Here in the cold wet uk, we have been making all these types pies for hundreds of years.the minced meat pie is the pre curser to our modern Christmas minced meat pies, hence the name . Next time experiment with hot or cold water pie crusts yum yum. Good show thanks

Welcome to northern English pies a staple all over the uk really. I’d love to see you make a nice big pork pie with suet pastry and mince pork and pork fat. Add chutney or dried fruits for extra yumminess. Love your work. 👍🏻

Excellent as always. For a traditional English pork pie, do a search for “Melton Mowbray pie”. Nothing like your pea meal baconish pie.

I'm very surprised the butchers didn't know anything about meat pies. Meat pies are not mainstream American but many of us have parents/grandparents from across the pond who grew up on these pies so they're not strange at all. (I do prefer modern mincemeat that does not contain meat or suet.)

American's trepidation when it comes to meat pies mystify me as an English guy. There are few things I love more food-wise than a steak and ale pie with top notch indgredients, packed with gravy and meat and a flaky rich crust, with some potatoes and veg on the side.

Using lard and other kinds of animal fat in pastry and dessert making is super common in China. Although butter was never common there historically, crude animal fat still could provide the same desirable properties as butter, e.g. emulsification and high melting point, etc.

The sweet and savoury pie thing came about from a time when manual labourers used to make pastry encrusted lunches to take to work for their midday meal which had sweet in one end and savoury in the other. A whole two course meal in its own little baked lunchbox - over time they boundaries between sweet and savoury became blurred.

That was especially true of Cornish Tin miners, whom also had a tiny pocket of just pastry to feed whatever creatures - and ghosts of dead miners - lurked down there ... plus, served as a convenient 'handle' so they wouldn't be eating the dust off of their hands ... In fact, that's exactly how the famous Cornish Pasty came to be, in the shape it is ...

mince pies are traditional Christmas food and the modern pies use suet in them, traditionally in the middle ages minced meat was used as well as the suet and dried fruit and candied peel......this is where the name comes from.

im just stunned that Americans don't use suet and lard and tallow in savory and Sweet pies, Suet and lard pastry is the mainstay of Traditional Pies in Europe, whereas butter is used in tarts cases and shortcrust and puff pastry.

@@Blueshirt38 actually considering lard and tallow were main fat sources up until cheap oil vegetable and nut and seed oils became available in the 19th and century and if you look at colonial and later recipes they only ever mention these fats and maybe olive oil it surprising they are not still common place.

As an Australian, I don't understand how meat pies haven't taken off in the US. Mind you, these really aren't like Aussie meat pies. A favourite Australian pastime is arguing about which country town has the best meat pie. I often use like 10% lard 90% butter in my brownies, because that way the fat is a little less melty and so the mouthfeel is less oily and a bit firmer but in a toffee-ish kind of way.

Pretty rare here. You might find an occasional bakery with them or an adventurous pub. Shepherd's pie is somewhat well known but otherwise pie is thought of as strictly dessert.
