I like to use my left foot like the clutch in a vehicle for speed petal control. Because, I can then brace my right forearm on my right upper leg.

This is a cone 10 buff stoneware from Continental Clay in MN.

For porcelain especially I like to wedge a behive shape more to center even before throwing it down to the wheel head.
