I dont want to shim it, I want it lower. so I will sand it.

i don't want to tell the guy his job, but i would protect the side of the headstock while removing the nut. unless the guitar is completely beat up already...

I cant believe you assume there is a shim in there, what if there is no shim and we want to lower the nut?

This is a dangerous way to show an example of how to set a nut hight. If the bridge is set at a different hight than the one in the video, you will have very different numbers, so be very careful.

I think the nut is being adjusted after the rest of the guitar has been set up "perfectly".
