How to Bake No-Knead Bread in a Skillet (updated)… super easy… no machines

I have significantly improved (simplified) my technique for baking no-knead artisan bread in a skillet.
Bread making doesn’t get any easier than this… no mixer or bread machine (I’ll make the dough in a glass bowl with a spoon)… no-kneading (Mother Nature will do the kneading for me). And, you don’t need any specialized bakeware… you can bake it in a skillet.

Having just used this skillet for the first time, ru-vid.comUgkxIst1DRMCWM6dgd9VjXMFXlH4HeElE6Mc to batter-fry some macaroni & cheese, I'm absolutely in love with it. The foldaway design means it actually fits in my very small kitchen, but it also makes everything crazy simple to clean. While the instructions say you should not deep fry in this, you can, but do it with your best judgment; in my case the oil didn't even reach the halfway mark.It's hard to see in the pictures, but the skillet itself has a lip in the corner. This allows steam to get out during cooking if the lid is on (so don't try to steam rice in it), and makes pouring out used oil extremely easy.Cleanup was a dream. After detaching the plug and control circuit, the unit is just three separate pieces: The skillet itself, the lid, and the base which may or may not need any cleaning at all (usually just the handles). Compared to a dedicated deep fryer I purchased in the past, where the heating element was suspended in the oil and everything was difficult to clean, the difference was amazing.I'm definitely looking forward to using this for more things in the future.

I wanted to let you know how much I love your videos, because of them I was inspired to give bread making a try. This year for the Christmas holiday time I made and gave away about 25-30 loaves. Now whenever I go to visit my daughter in AZ I am asked to make her a couple for her. Next time I go I will bake several that she can share with her friends and co-workers...

I never could make a decent loaf of bread until I found this channel a few years back. Making bread became a very simple process. But, now it's even easier. Thanks Steve for your guidance in bread making.

MM Reporter no knead is a nice first step to making much better breads if and when a person decides to get serious about it as a craft. However for those who have no interest in learning how to make artisan bread, this is still vastly superior to the crap they sell at the supermarket!

I wanted to add to Retiredin's comment: Steve has a recipe for rolls baked in a toaster oven. You can probably find one of those at many of the places you might spend the night...and you can certainly proof the dough on your tuck, on your way to wherever your last stop of the day might be. 2021-03-22 💗 🍞🥖Steve Gamelin taught me to bake my own bread. I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'. Glad to see you again Steve! Instead of plastic wrap, I prefer to use a plastic shower cap. The elastic band keeps it sealed over large mixing bowls and can be washed/reused. Nonstick spray might give a better crust on the bottom, but I think parchment paper is more convenient for cleanup.

Score the top of your bread with a sharp knife or razor so it doesnt break at the bottom. You can also dust the top just before scoring and baking for an artisinal look.

Works great in a stainless steal pan or pot that's been preheated too. I've tried it a few ways and they all come out the same.

I made this last week and happened to have some left over cooked quinoa in the fridge, so on a whim I stirred 1/4 cup of the cooked quinoa into the bread dough. After putting the risen dough in the skilled I made about 6 or 8 cuts around the perimeter, half way to the center. Then I made more cuts connecting each section so I had a circle in the middle. In the middle circle I sprinkled some fennel seeds which I ground with a mortar and pestle. Around the outside ring I sprinkled a generous coating of chia seeds. It was SOOOOO delicious. The quinoa gave it a nice light texture and flavor, and the seeds on top added other interesting flavors to the crust as well. Thank you so much for this recipes, Steve. I just thought you might enjoy trying my experiment some time.

This was the third no knead recipe that I used following Steve's instructions. The first two came out pretty well, but this one was a disaster. The dough was wet and sticky the next day and I had to knead in almost 2 more cups of flour. I came to the conclusion it is definitely the flour that Steve uses that his bread comes out so beautifully. After struggling with this sticky mass, I have decided that I will just continue to make bread the way my mama taught me. I am not a lazy person and I don't mind baking bread in a couple of hours and on the same day. It takes a little more time, but hey, I have a lot of time so why use the no knead method. Cheerio!

I don’t know if you check these older vlogs but I am trying this recipe tonight. If it turns out, I will gladly buy your cookbook. I make beer bread but they don’t suggest proofing at all, just throw it in a pan and then the oven. Most of the time it is good but depending on the weather. Thank you

I agree with all this... the Dutch Oven keeps steam in, but you can totally just use a skillet or flat pan. Even a baking stone or steel.

I have cooked my whole life but making bread was one thing I just couldn't get the hang of till I watched your video. You made it look so easy and simple so I thought ok I'm gonna give it another try and it came out beautiful thanks to you. I no longer buy bread my husband loves the homemade bread and says store bought don't taste like bread. Thank you Steve for your time and videos.

I tried this today in my turbo oven. Don't have a skillet or PMDO 😊. I bought an 18cm stainless casserole pot and removed the handles. Cooked for 40 minutes @ 175°. Removed from pot, put back in turbo oven ass up on lower wire rack and cooked a further 10 minutes @ 200°. I plan to try the beer recipe next. Thank you for your unselfishness in sharing.

Like so many others your videos have inspired me to make bread at home during this pandemic. Your steady voice and calm demeanor has been a beacon of sanity in these trying times. I held out for ages till I finally found a cache of bread flour (everybody is baking at home now!) and finally took the plunge last night :-) am waiting on my 2nd proofing now!! Thank you Steve!!!

Easy way to make bread! Yup...I grew up learning that salt should never touch the yeast but after discovering your method, I know that is not true and bake all breads the way you do! Thank you!

Just tried this recipe in my cast iron skillet - so easy and DELICIOUS! I’ve also tried the PMDO. Just as easy and makes a great loaf of bread. Thanks Steve! This is now my favourite way to make terrific bread.

This is so fascinating. It seems to me this would be the way early and medieval recipes would be made. The yeast would come from the yeast naturally present in a kitchen’s air, the very hot oven from an oven heated with wood and twigs to a high temp and the bread cooking as the large heat mass of the oven cools!
