Excellent Instructional Video. I have pressured canned as well as waterbath canned for years. Safety is paromount in pressure canning. Many of the RU-vid videos practice very bad unsafe canning however you followed all of the FDA guidelines!! Good job. One thing to mention...do not re-use the lids. You can keep the bands but the metal lids are a one-use item. Writing on them is a good way to not reuse them. Also, I usually wash my filled canned jars in hot soapy water before storing them. This gets off any yucky stuff that might have gotten in the water. And don't store with the rings on as you won't be able to tell if any fail in storage.
We so agree with you about the mis-information on a lot of the RU-vid videos. You are also right about using new lids. I too, take my rings off and wash my jars after processing. I didn't show that only because they looked better in the photo with the rings, lol. They not only look yucky but the smell weird. Thank you for the helpful tips that I left out of the video.
I like beans. But I always buy the cans. A few months ago, a friend gave me a quart of beans they had canned. Yummy. I have canned meat, veggies and fruit for a lot of years, but never have I canned beans. Mainly, I guess, because I wasn't sure how. After watching your video, I no longer have that excuse. Time to pull out some of my long term storage dry beans, eh? Thanks for the education and inspiration.
I like the idea of canning meats and beans, but have never done it before. Just to clarify, you said towards the end of the video, "to make sure to use a pressure cooker, not a pressure canner." I thought it was the other way around. Which is correct and what is the difference?
I want to learn to can but I’m scared i won’t do it right and get botulism! Will it always be obvious if the canning is not done correctly and the food is spoiled?
I have found that the sound quality on all the videos is very poor. I am hard of hearing so this makes a BIG difference to me. Ny sound is up to max and I still cant catch a lot of the words. Even useing closed captioning, it is clear that the program is haveing a hard time catching the words because the translation is waaaay off mark. Hope you can get better microphones. This is awesome info with great video clarity but the sound quality brings things waaay down!
