How to Can Homemade Salsa

When you grow up with home-canned foods, you become accustomed to the flavors you know. Salsa is one of my favorite foods that we preserve, and over the years, I've adjusted the recipe to exactly my taste!

I've started to use a variety of peppers and roast them first to add a depth of flavor. Sweet bell peppers can also be used as a swap. I like to know it's spicy so I add up to two hot peppers as well.
As it cooks, make sure to taste it and adjust accordingly!
Ingredients:
- 16 cups, peeled, seeded, and diced tomatoes
- 2 cups roasted and diced peppers
- 1-2 hot ghost/habanero peppers (optional)
- 1 1/2 cups chopped onion (2 medium)
- 2 lbs tomatillos, husks removed, roasted and diced
- 1 cup cilantro, chopped
- 6 cloves garlic
- 1 1/4 cups white distilled vinegar
- 2 tsp cumin
- 2 tsp salt
- 12 oz tomato paste (optional)
Instructions:
- In a large heavy-bottomed stockpot, combine the prepared tomatoes, peppers, hot peppers, tomatillos, cilantro, garlic, vinegar, cumin, and salt. Stir and bring to a boil. Reduce to a simmer and stir occasionally to ensure no sticking on the bottom of the pot. Continue to cook 25-40 minutes until the salsa is reduced slightly and thick.
- To thicken, stir in up to 12 ounces of tomato paste and cook an additional 5 minutes.
- Remove from heat and pour into prepared sterilized pint jars, leaving 1/2 inch headspace.
- Wipe the rims of the jars and fit with a lid and ring.
- Place in prepared water bath and process for 20 minutes, adjusting for altitude.
- When finished, remove from the water bath and cool on a rack for at least 12 hours.
- Store in a cool dark place for 1 to 2 years.
Makes approximately 12 pints

I made this salsa a couple weeks ago. Tonight, I opened a jar and I have to tell you...THIS IS THE BEST SALSA I HAVE EVER TASTED!! SOOOOOOO STINKING GOOD!!! I just started canning for the first time ever and I am so inspired. I just made this recipe over the weekend and this is the best salsa recipe I've ever made. I had some with my scrambled eggs with sour cream and omg, so delicious! Plus I love to snack on the blue corn chips and I had some with that and it was so good.

I grew the tomatoes and all the peppers and (last winter) the garlic that went into this recipe. It is BY FAR the best canned salsa recipe I've ever come across. It is thick and has great flavor. Thank you for posting this! your recipes are spot on. A keeper for sure.

I made this tonight... a full batch. It's amazing. I even plucked a ghost pepper from the garden to add to it. I wish I had added two - that's a lot of salsa. ha ha ha I think I may have to cut back on the vinegar next year because my tomatoes have always been so high in acidity. I have always wondered why I didn't like my salsa - the tomato paste at the end makes the difference. Oh... definitely roast the tomies and peppers. Love those little specks of black, those are always the most flavorful salsas.

Your salsa recipe is a lot like mine, I never peel my paste tomatoes, it makes it so much easier and when chopped you really never know, I also strain my salsa with a fine mesh strainer before heating it and put the juice into another pot and boil the juice down a bit and can the salsa juice for chilis and soups or bloody marys.

I cant believe how clean you are. I did canning this week lol if you could see my kitchen !!! Ha my whole kitchen looks like a bomb went off . I was easy on the hot peppers I used a habanero well half of one and I would say my salsa is more on the mild side thanks for the video it was an inspiration to be cleaner. :))

I'm trying your recipe. Thank you. What are the directions to roast the tomatillos? Degrees? Do you toss in olive oil first? I thought roasting the peppers, onions, garlic, etc. along with the tomatillos you used would bring out flavors more.

You are simply amazing. I am unable to buy jar holders in my country . Tonight I am making your garlic and roast pptatoe recipe. In Vastetvik Sweden we boil baby New Potatoes with their skin on. When cooked we drain and leave to cool with the skin on. When cool,, still with skin on we toss with vinaigrette and chopef parsley and that becomes oir traditional rural potato salad - not with mayonnaise! Try it its delicious. 🐒🐒🐒🍊

First time watching and your salsa looks delicious but u need to either add some lemon juice or citric acid to make it be safe.I dont like the lemon juice so I add 1/4 tsp citric acid into each jar before adding my salsa. I just want you to be safe and this way no botulism will form.
