The camera itself doesn't have a aperture seyting, but rather than lens itself. The standard zoom lens that comes with the Canon 600D allows for a f3.5 Depending on the situation this might be okay, you might be able to adjust your ISO to help (just remember it might be grainy)
In the settings when the dial on top of the camera is on video mode (looks like a little film camera) you can select between manual exposure or auto exposure (if you do this you should always leave your shutter speed at 1/50 or 1/60 and then change your aperture accordingly) to record you need to press the red circle button on the camera, and press again to turn it off. It is also important that your SD card in a high class (8 or 10) otherwise it will only be able to record ten second increments. - hope that helps!
