This video teaches you how to change colours in crochet amigurumi - which often means crochet that's worked in the round. This is the same method you can use to change yarn when crocheting! Changing colours can be tricky to get the hang of when you start, but once you're an old hat at it it opens up a whole world of colourful amigurumi projects you can tackle next.
This video describes a horizontal and vertical colour change - when changing horizontally, it's more important to try and get an invisible colour change.

When you're done with the little white part, do you just switch back and cut and tie it off to go back to the pink? And then go around, and then switch back to the white?

Hello! Yes that's right 😊 the method shown here is repeated for every time I change colours where I want that sharp change - it's a bit time consuming if there are lots in a pattern but I've found it gives the neatest result!

What I really need is how to make the piece you're holding at the beginning of the video. How to rejoin the white on rows after the first one. Are you just cutting and tying it off on each row?

Yup, I cut the yarn at every colour change and tie them together, so for every switch from white to pink and back, I'm doing it the same way as in the video. It takes a bit more time, but I prefer the look it gives. You can also "carry" the yarn colour with you as you go - if you search how to carry yarn in crochet you'll be able to find some examples of this, but sometimes the colour peeks through the stitches when carrying it, which is why I cut and knot it.
