Yes clean as you go. I always clean as I go. My kitchen is NEVER a mess after cooking. Mrs Annette speaks clearly, clean and very encouraging. I enjoy her channel. And we attend the same church😊😉😘 The lime gives it a nice color. You seasoned the chicken really good. I know the taste was superb.
The FDA recommends not washing meat bc iT sPrEaDs bAcTeRiA- and white people be following this recomendation by the book! (I know bc I'm white and I even bought into this b.s.) As if we can trust government institutions to really GAF about our safety. The funniest part is these PSA's make is seem like just disinfecting the sink after washing your meat is humanly impossible! No, actually the funniest part is they don't even know washing meat is more like brining it with vinegar, salt, and citrice. They think it's literally just rinsing it under the faucet! (Again, I know, bc I'm white, and that's what I use to think!) I can't with us white ppl! 😆
The cleaning 🧽 is very good to keep it sanitize and since raw chicken contains salmonella; and it is wise to sanitize the sinks after using it; thank you for everything!
She gets an award for 'culinary cleanliness', alone! Didn't quite understand the name of the green sauce , but I came across this video looking for Carib- influenced cooking sauces. Sure looks good :)
Looks good, we do the same thing in the virgin islands and in Puerto Rico, when it comes to cleaning our meat... however I never seen or heard of someone dowsing their chicken with hot water
lovelylady0200 ... yes, hot boiled water is traditional for us when cleaning chicken, hen and turkey but red meats and seafood we use the cold water. Thanks hun for watching.
FINALLYYYYY! I've been waiting for this tutorial from you! Thank you for keeping it simple! Keep blessing us with your videos! Stay blessed. By the way do you sew?
my mom and grandma have some explaing to do.This was amazing to watch and makes a lot of sense in terms of cleaniess and potential flavoring .Nice thanks for sharing.
Beautiful stuff..! This is what am talking about. Haitian people are the best when it comes to COOKING. Mwen rinmin w Anpil sister. Much Love from USA.
First of all, I would like to take the time to say thank you for showing to some of us how to prepare and seasoned a nice delicious chicken 🍗, but isn’t too much acid: Lemon 🍋 and vinegar and some of us are suffering with acid reflux and a little bit of bitter orange 🍊 is enough for preparing this chicken 🍗; and every bacteria 🦠 such as salmonella in contact with the heat kill all microbes 🦠; and I just want to get your attention ⚠️ to this; and thank you for sharing and bon appétit 😋 😋😋😋😋🍗🍗🍗🍗
Your welcome and no it’s not too much acidity. The majority of the acid was removed after pouring the hot water on it. I do understand your concern! We clean our meats with fresh lime, vinegar and salt mainly to remove the raw smell. It also gives the finished product a better taste. I understand that heat kills bacteria . I learned that back in culinary school along with the different internal temperature to cook meats. Thanks for commenting!
lime or lemon juice And vinegar is also good to clean the chicken are just any kind of meat you could also had a little salt in the water has well That will take care Of Bacteria
Yes, I have other videos where, I use limes, vinegar and salt. If someone does not have vinegar, lime and hot water works very well. By the way , Bacteria like salmonella and campylobacter, are found in raw poultry and undercooked chicken. So, washing chicken with lime, vinegar, salt and hot water doesn’t kill the bacteria. Cooking chicken with an internal temperature of 165° Fahrenheit kills the bacteria!
Hello after you season and pour hot water .. is it possible to let it marinate in the fridge for a day or two ? Or it has to be the same day because the hot water
I sent this video to a friend of mine. I'm surprised how many people don't wash their meat! Some people say it depends where you're from but my family's been born in the United States and we always wash meat like this.
I am a stainless steel user - cook I noticed a lot of Haitian cooks use aluminum cook ware. Aluminum in the brain is the common core found in alzheimers patients as a result of years of using aluminum cookware. I encourage you to read up on it and if you find the information valuable, share your findings. Thanks for your detailed instructions.
I researched the beat pots to use (cast-iron and stainless steel) years age. I own quite a few of them. I got rid of all of my non stick pans and replace them, but I held on to two of my Dutch pots. I just like using my them. Thanks for commenting.
Annia Fonrose .. thanks, No but my Turkey, chicken gizzard, oxtail and couch videos shows how I color my meat, we use the same method to color the chicken. I hope that helped.
You mentioned marinating in it's own juices, do you leave it out on the stove top while marinating (because of the vinegar and lime) or put it in the refrigerator? How long do you let it marinate?
No I don't marinade anyting on the stovetop. I am a certified chef, I know obout time/temperatures danger zone. I transfer it to a glass bowl and marinated overnight in my refrigerator.
Very clean lady. I would definitely eat your food. I have one question why didn't you put some salt on the chicken when washing it? My mom taught me to put water and a piece of lime in the water after rising my meat put it on the boiling water let it boiling for like a couple minutes before putting my seasonings.
Yvie Demonstene ..Every household does it differently. My mom taught us to uses salt and limes, because it has antibacterial properties that will kill bacteria that may be on chicken. Boiling your lime kills off it’s vitamins and antibacterial properties .
I’m not a fan of drumsticks, I really only like the wings... I’m curious how you’d prep those because after seeing this I’m sure I’ve been doing it all wrong 😩
Annette !! For the hot water trick when cleaning I do that for drumsticks. But when the skin stays on (thighs and wings) is the hot water trick necessary?
Hot water is used in my culture, to rinse chicken off after cleaning it. Our cleaning method happens to make taking off the skins easier (it is not a trick). Chicken Thigh skins is easy to takeoff, so you can remove it before pouring hot water on it.
Darleen Doxey ....thanks... washing your hands thoroughly before cooking is a must, but not wearing a glove while handling raw meat is not an issue. If there is any bacteria present on your meat , the heat will automatically kills it, While it cooks. NOW, Touching cook food is a no no,!! You must wear gloves when handling cooked food, at all time.
Me when l cooking any meat l leave the meat for one hour or 30 minutes and lemon salt and vinegar and after that I boil the water and I put some seasoning ok 👌
I'm sorry for late response, I have a video up on cooking a chicken with sauce. To answer your question, I would add water depending on the style of chicken, I will make.
The reason this process was in place was to protect Haitian without refrigeration from getting sick. After an animal was slaughtered there wasn’t an effective way to keep bacteria from accumulating on meat. We continue using this method because it also adds a nice flavor to our Meats, if you skip this process it won't have the authentic Haitian taste. I hope this answers your question.
@@dorannette26 ok! Thank you. That makes sense to me. I enjoyed your videos. I was looking for some good recipies, I love thai food because of the flavors and textures of crispy vegetables with noodles and all of the combinations they have with spices. However I have tried many of the dishes and I'm looking for something new I am Italian-American and very bored with both Italian cooking and American Cooking. When I lived in another state I attended two different African churches for a while and loved loved loved their spicy foods add potluck dinners so last nite I wanted to find some African good recipes and I have also a Haitian friend who was telling me about how she makes her spices so that brought me here. Thank you for sharing your knowledge with us.
How long do you leave the chicken in the water ? 😭 my mom left my to make the chicken , sometimes I watch what she’s doing but I’m not ready to make the chicken 😭 I’m 14
We do lemon water. I don't care what people say, I will wash my chicken and fish. If you have been in a meat factory you would know. My people do wash their meats. Of course you don't open the water on full blast and go ape shit with the washing. We then clean the kitchen. People combining about preparing food and storing foods yet they have no idea how yoghurt or cheese is made and what's actually in them.
