back to deli after pandemic time out and found rotisserie & oven totally black. I left it spotless grrrr, our store supplied 'degreaser' barely works. I got some carbon off and it's doing the job, still takes arm muscle. I can't leave overnite as the morning shift wouldn't appreciate having to clean it up before starting. Would love to try some of the griddle john but gusss its not around and other prices I see are to high for me.

Couple of ideas, here; throw out all of your products that involve steel wool… Instead, get those scrubbers that are made out of tight coils of very narrow and very thin strips of stainless steel or copper… Instead of gouging, they use more like a shaving action; they are excellent to removing almost anything, and orders of magnitude LESS likely to scratch. … What follows here is strictly for educational or entertainment purposes, and undertaking any such activity will likely cause death or injury. I state uncategorically that you must not do this…Now, as with so many other things, the more dangerous it is the better it works; all of your old school oven cleaners that your mother had to dress up in a hazmat suit to use, had lye in them, but by Jiminy all that stuff on the inside of the oven just melted away… The key ingredient there is ‘lye’; Sodium hydroxide, also known as caustic soda; it is unquestionably the most powerful dissolver of grease to be had. It is also used as a drain clog dissolver, but it’s use has been greatly curtailed because it is extremely dangerous, and with all the lawsuits by people that claim the manufacturer was negligent because the label did not include a warning against using it as a nasal spray, or as a topical treatment for hemorrhoids, and since the population just continues to get stupider, you see this less and less in household cleaners. Stand by for lawn mowers with nerf blades … yet, those too will require a warning sticker asserting that the State of California has determined that nerf blades are known carcinogens and cause birth defects … I digress … anyway, it can still be had, but the way to get it is from the plumbing supplies world (they have it at Walmart)… It is sold as a drain opener, since it dissolves almost anything… The problem is if you were going to use it as an exterior cleaning agent you will need to pretty much gown up hazmat style. I’m not kidding, get some on your hand and give it 10 or 15 minutes and you may have a blister already… get some In a small cut, and you will wish you had never been born. Needless to say, if it was being sprayed on, and you inhaled any, it would do the same thing to your airway as it does to the inside of an oven. It mixes easily with water to make a solution, but be aware, and I know this from experience, if you put a quarter cup of Red Devil Lye crystals, and just poured some warm water in with it, The reaction would be quite violent, huge amounts of foam would boil up over the edge of the container and get all over whatever it is sitting on, and if there was any solution left, it would get so hot that it would boil itself out of the container. Always start with water and add the sodium hydroxide a little at a time, just be aware it can get very very hot just from the chemical reaction. Oddly enough, many of these chemicals sold as drain cleaner cleaners are monumentally incompatible… While lye is extremely alkaline, it might be sitting right next to a bottle of sulfuric acid-based drain cleaner, and if you think vinegar and baking soda react… Well, mixing sulfuric acid and caustic soda would be extremely dangerous, not only does it get terribly hot, terribly quickly, it likely would give off a poisonous gas; and right next to those two on the shelf might be a sodium hypochlorite-based drain opener, which is basically bleach on steroids… Mixing that stuff with ANY acid, can release chlorine gas… I mean literally - a green fog that creeps up and crawls over the edge and cascades down to the floor… Mustard gas… One whiff of that stuff, if it doesn’t kill you, will sear your esophagus and probably give you double pneumonia. … Leave all that shit alone, please. What you are after is the one that says on the label that it is lye, caustic soda, or sodium hydroxide. Those are the magic words… It has to say that … if it says something else or doesn’t say what is in it… Leave it alone, you need to know what you’re dealing with. Again, whoever applies this is going to need to wear a full face splash proof face shield, a mask or respirator that filters out vapor…like what a painter would use; they need to wear heavy rubber, latex, or nitrile gloves… You know, Dexter‘s mom dishwashing gloves… since it will bleach, and or put a hole in your $300 Versace jeans if you happen to get a droplet on them, while you are in Walmart, get some disposable full body coveralls. (Paint dept ) and think through stuff like scrapers, drop cloths extra mask filter etc. while they might have larger versions of those stainless steel scrubbies in that section, those are usually with the general cleaning and kitchen sink dishwashing… Just make sure they look like a wad formed from a tiny STRIP tightly coiled stainless steel - NOT Brillo style steel wool. On something the size of those big ovens you were cleaning, I would think about applying the solution with a big 4 inch brush, or possibly a paint roller… The kind with the “splash fender”… For obvious reasons. Since this is so potent, the final rinse needs to be particularly thorough.
