I just for the first time tried this this month. I think the most important step is the week wait. It was nasty right of the grill but kind a fantastic a week later. Mine was only smoked for 45 minutes so I bet yours had quite a kick in after two hours. LOL

That is pretty cool. I no longer have a grill, but if I did, I'd try this on my homemade nut cheese. Right now I cheat and use smoked spices and liquid smoke. But your trick looks super fun. Happy Smoked 🧀
Nice. If I had thought about this a bit longer, I would have used a wire cooling rack. Just be careful some people may not appreciate a smokey cooling rack! Thanks for sharing.

Anyone know how well shavings/light chips work for this? I turn a lot of dry apple wood, I've been collecting the chips as they come off the lathe and they're mostly quite large shavings from a gouge so not dust, I thought it might be quite good to have a lot of apple wood smoked cheese for Christmas if I can use this.
I don't know if that'll work in the pellet tube, but you could probably mix the shavings in with some pellets. You could also light three charcoal briquettes and put the chips on top of them. hey grill top, i tried this the other day but i ended up getting that gross acid smoke taste. what did i do wrong? i used pellets and also a similar smoke generator. only difference was that i didnt fill up the generator because i didnt want to waste the a whole tube just for an hour worth of smoking.
Did you let the condensation dry off in the fridge, wrap it, and let it sit for a couple of weeks by chance? I tried it a day after smoking it and had a similar experience. It takes some time for the smoke to mellow and soak into the cheese.
@@GrillTopExperience i did let it sit in the fridge for a couple of hours but yeah i'll give it some time. it has nothing to do with the way i lit the pellets right? or me not letting the smoke turn "blue" like when smoking meats?
