How to cook a Simple Peruvian chicken recipe

Cooking with the KingFish Peruvian style Chicken
Ingredients
One 4 pound chicken
½ teaspoon dried rosemary
2 teaspoons of ground cumin
1/2 teaspoon dried oregano
3 garlic cloves minced
3 tablespoons soy sauce
1 tablespoon white vinegar
Juice of 1/2 lime
1 Tablespoon hoison sauce (optional)
12 oz beer (darker the better)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
Directions
Combine all the ingredients minus the chicken and paprika in a blender and blend until combined. Pour the marinade over the chicken in a large zip lock bag or pour all over chicken in a bowl and let it marinate in the refrigerator for 24 -36 hours.
Next Day.
Preheat the oven to 400 degrees F.
Remove the chicken from the marinade and put on a rack in a roasting pan. Sprinkle with paprika. Pour marinade under the rack. Roast for about 1 hour. When you stick a knife in the thigh the juices coming out should not be pink. Let the chicken rest for 15 minutes before slicing and serving. Enjoy…
For the Peruvian Green Sauce
1 packed cup of fresh cilantro
1 Jalapeno pepper diced
2 garlic cloves chopped
1 Tablespoon of Extra Virgin Olive Oil
2 ½ teaspoons of freshly squeezed Lime Juice
¼ teaspoon of kosher salt
1/3 cup of mayonnaise
1 Tablespoon of water
Pour the above ingredients in a blender for about 1 minute and refrigerate until ready to use. Enjoy…Easy Peruvian Chicken Recipe. I'm just a home-cook originally from Brooklyn, NY. Peruvians do not use beer traditionally, nor rosemary, The yellow ahi amarillo is the traditional pepper used, we don't have it here. I was in Lima a few weeks and just got back. We can not match their cooking without the yellow pepper or limes they use, but can get close.

I am not Peruvian but received the recipe from someone who is. I am Italian and just like many Italian dishes that get Americanized maybe it is possible the same thing happened here. In the end it is all about taste.

I'm Peruvian and I'd never had this before coming to the US. Really, never. It amazes me how this "Peruvian recipe" is so established in America.
