No matter what you do to whole turkey it will still be somewhat dry and boring. There are ways to cook it better, spatchcock it, forego turkey entirely and get a duck, roast beef. But if you have to have that picture perfect bird on a platter don't expect it to be delicious. It'll be great in sandwiches but that's pretty much it. And I do know how to cook turkey. If people don't eat all day because they are waiting to feast on Thanksgiving dinner then of course it will be delicious because hunger is the best seasoning.

@@Kyarrixnot my mom’s turkey. It is the best and never dry. I don’t know if it makes a difference but she cooks a fresh bird, never frozen.

@@tamarak9393 if you spatchcock it or put the dark meat in the oven first. Otherwise if the dark meat is at temperature the white meat is overcooked by definition. The dark meat is denser and takes longer to get to 165° if your dark meat is at 165° the white meat will be 180°. The only way to get around that is to spatchcock the bird or otherwise separate it so that the dark meat goes in first.

So ppl don't have to look it up: 450f is 230°, 325f is 160°, 165f is 74° and cook time is 22 to 25 minutes per kilo.

Do you think adding too much rosemary and sage will effect the taste of the turkey and the gravey . Also other thing you can use to stick the skin are the wooden toothpicks I use them all the time when I bake chicken or stuffed quails or pigeons because as I am an Egyptian cook we do stuff the pigeons and the quails with rice and roasted in the oven with special techniques

A trick I learned from my mother in law forever ago, was because it could go to the table already cut up, to begin cooking the bird upside down. I know it sounds crazy but I leave it upside down for about 1/3 of the cook time. Then I roll it over and finish cooking it. It can flatten the top a bit so if you’re going for a picture perfect bird this may not help you. But,,, doing it this way I’ve never had a dry bird!

I would let it rest for longer than 20 minutes more like two hours. The hot gravy you’re making will warm up the turkey.

I used a combination of butter and bacon to keep my Turkey breast moist. Tent with foil and leave it to cook at 350 never baste it. Moistest Bird Ever!!!

Used this recipe today and it was the best turkey I’ve ever cooked and I have been cooking turkey for over 40 yrs. My husband doesn’t like rosemary so I mixed in dried thyme, marjoram salt and pepper into the butter that I added to underneath the skin. Not using a rack under the turkey and cooking at 450 for the first 15 minutes….genius!!! I loved the addition of lemon, garlic and onion to the broth. Made for the juiciest turkey we’ve ever had. Better than brined. Thanks so much. I watch all your videos and they are my go to recipes

I've been making Thanksgiving dinner for over 50 years, often for large groups of friends, but I'm going total Preppy Kitchen this year and following all your recipes. Including the pumpkin pie, with the pumpkins I grew myself. The only one I couldn't find is the turkey gravy recipe. Love your channel, Thanks!!!!

Get a REAL turkey… a pasture raised heritage breed… not a mushy-meated frankenbird. Rub the bird with olive oil… sprinkle generously with kosher salt. Put it in a 225 degree smoker with medium smoke for two hours and finish it in a 300 degree oven. That’s all you need to do for a fantastic turkey. We raise ‘em… we know.

Never baste a Turkey. Just put the Turkey in the oven at 350 and never opened the door until the bird was ready and GUARANTEED to be soooo moist. Opening the door to baste let’s heat out forces the oven to worked harder and it results in drying out the meat. Turkeys need a slow gentle heat to keep them moist. Yes put butter under the skin or I put bacon over the breast to keep it moist.

Looks good, but I've started cooking my turkey differently the past few years. I make my stuffing, put it on the bottom of my roaster, then place the spatchcocked turkey over the top of it. We love it this way, and you can get much more stuffing flavored with the wonderful juices from the bird. I'm not a fan of stuffing roasted separately from the bird, so this way there's plenty for the table and to have later and freeze, as well.

It’s not just to get the chill off. It’s so the outside isn’t dry before the inside cooks. It’s a tip. And a good one. if you take the time to brine, do an extra day, or 12 hours ..or ANY time to sit uncovered in the fridge to dry. The butter is key though. Get handsy! Sage is really best. Rip the skin if you must. It’s not the worst problem if you are easy and PULL that skin back up.(it’s harder to rip that skin than you think. Go all in! The skin will pull even with the pins. It helps though) Btw, the skin is nearly zero of the turkey. Don’t get caught up with that. The meat is more important! The fat juice is best for gravy!!) You know it’s true because he softens the skin after the fact. Why make it so crispy just to moisten it up? Up to you to decide) Nobody eats the end bone of your drums, forget that step. This dude like looks and perfection, your guests won’t care) The turkey will rise in temp. 165 is dumb. If 165 is done you’re going to 175-190 if you rest it proper. Remember, a gravy will rise the temp again as well. You won’t die! Forget the 165 as a pull out time if you care about the moisture. Dry turkey sucks. Even 160 if you are concerned is best to pull. 155 is going to work IF you rest it properly)

You didn't show us how to pin the skin -- what pin did you use? how deep did the pins go?

They were using metal sewing pins/needles and that’s extremely risky!!! 🤯 Don’t use pins or needles. Use toothpicks. Stretch the torn skin to cover the exposed meat then use TOOTHPICKS to secure the skin along the torn edge where you want it to be. The toothpicks go about a half an inch deep. It’s fine if they go deeper but if they are too shallow then they might not hold the skin in place.

If you go out to your garden and gather your herbs before they freeze you can save them for the winter. Simply chop them and put them into ice cube trays and cover with melted butter or olive oil and freeze. Drop the cubes into a ziplock bag and pull one out to throw into your meal you are preparing. 😊

Oh yes, gravy recipe please. Something about roasting gravy brings the poultry-flavor richness experience full circle. I am trying this on chicken instead of turkey this year due to a much smaller party, and trying Gordon Ramsay's cider trick for the gravy. I'm almost tempted to use it as the roasting broth along with the chicken broth, but we'll see. 😋
