Ghee rice is a flavorful Indian dish made with basmati rice and a blend of aromatic spices. To prepare it, start by washing and soaking the rice for about 30 minutes. In a pot, melt ghee and sauté whole spices like cinnamon, cardamom, and cloves until fragrant. Add sliced onions and cook until they turn golden brown.
Next, add the soaked rice and sauté for a couple of minutes to coat the grains with ghee. Pour in water (usually in a 1:2 ratio with rice), add salt, and bring to a boil. Reduce the heat, cover the pot, and let the rice simmer until it's cooked and the water is absorbed.
The result is a dish with fluffy, separate grains of rice infused with the rich aroma of ghee and the warmth of the spices. Ghee rice pairs wonderfully with various curries, gravies, or even roasted vegetables. Garnish with fried cashews and raisins for extra texture and flavor.
