No seasoning, no trimming and no smoking wood!
In this video i'm going to show you how to cook beef ribs in a charcoal BBQ!
I didn't think i'd enjoy this cook so much, but getting back to absolute basics was awesome! Just meat and fire!
This was such a simple cook, hanging a rack of beef ribs over charcoal at around 250F/120c until they were probing tender which took around 6 hours.
Then they were rested, sliced and served!
Being able to taste that beautiful beef with some nice charcoal flavour was a good experience to get back to! Definitely give this a try for yourself and if you have any questions, don't hesitate to ask them in the comments below!

for years Aaron I have been thinking about doing the same type of cook, no salt, pepper etc! You saved me the job! Still looks fantastic, so it goes to show you that you do not need a lot for a decent finish! I prefer my Salt and pepper when going direct on my Santa Maria style cooker on my Weber. There is something about having the fat drip on the embers and bouncing back with more flavor kissing the meat! Once again Aaron, thanks for the video! 💙

For just using charcoal, they have come up mint. They would have a very unique flavour but would be awesome!!

Looks awesome, but can't help but feel like a dry brine with some salt ahead of time would have really enhanced the beef flavour without taking away from the charcoal element. Still good vid to show it won't fall apart.

I don't use rubs at all, just put the meats straight into the offset smoker and play around with different timbers.

I was smoking ribs the other day and almost went with charcoal only. There's times when I feel like my cooks are over smoked. I'll have to try just charcoal smoking next time. Thanks for the video!

@@MidnightToDoosh oh. Sorry no you couldn’t hang in a Weber unless you had maybe the centre grate removed and some sort of Weber hanging attachment. Could be done but very tricky

Very common to do beef ribs that way in south Brazil, only difference is that the bones are cut in half or a third compared to Aaron's beef ribs, to use a single spit and go faster. Coarse sea salt only. Google "costela no espeto" for references.

@@LownSlowBasics i ve been doing a few cooks without the deflector.... even a beef shin, for the first part, then rack on and braise..... i think deflector on or not is a thing, as is bare bones smoke or season up.....good to get back to a basic smoke and then build your style from there
