Nikki's mom Ms. Margaret Jones shows how she makes her awesome cornbread fritters. These are typical of the fritters used for the famous Lumbee tribe collard sandwiches. We love these with cabbage, beans, any kind of home-style meat or vegetable. They are even good with jams and jellies. Many thanks to my mother-in-law for sharing her knowledge and humor!

It really is so awesome!! Love love love my lumbee family! I’m so excited for this weekend cause I’m coming home to be with my family! If I don’t come home at least every couple months and if I definitely don’t make it for homecoming my Grandpa and cousin and them would never let me hear the end of it! But my fave time to be home is always in July for homecoming and getting me a collard sandwich!! It’s literally the best in the workday ❤❤❤

Nikki's mom, Ms. Margaret is a Jones from around Union Chapel. Nikki's dad was a Freeman - Lord I can't remember which area he was from. Cool to get this comment. I'm her husband from the mountains. I'll pass along your question.

"Flitter" now THAT'S interesting... My grandma calls them flitters as well, with an L. I always thought it was an accent thing or she was being cute, but Ms. Jones saying it the same makes me wonder.

Cool that you have this story to tell. I wondered if it was just something she came up with, but there may be more to the flitters/fritters!
