i was about to ask you whats your favorite way of cooking them but you seemed to say that already in your video ! ^_^ loved the video, especially since i dont have a steamer anymore so the pan frying version of the dumplings sounds wonderful! I am about to order this month, some vegan king prawns! You think I should try them as a filling for my dumplings or it would be a waste in a filling and i should eat them as a whole? - also forgot to ask one more thing. how do you know when the dumplings are ready? since they are white before you put them in the frying pan and even whiter(kind of transparent) afterwards as well?

maria Thank you for your kind words, dear. For the vegan prawns, I would advise to try them plain at first. Just steam or pan fry a couple to see how you like the taste; perhaps with garlic and salt if you like. I find them more firm than the original so they can't be used exactly like a regular prawn. However, I think the vegan ones are really delicious too. I don't think it would be a waste to use as dumpling filling but it's really up to how you like to have them best. The next time I buy and cook vegan prawns, I will film it and tag you. I'm not sure when I can get them though. I have to go to a certain store to buy them and I don't usually go there. For knowing when the dumplings are ready, I look at the skin. It should have a translucent quality to it. You will see the filling underneath. It's hard to see on camera but in real life the difference is very noticeable. The skin is the fastest part to cook actually. When you use my method, the dumplings should become completely cooked. However sometimes when I am steaming dumplings, I may not be sure of the timing (or worse, I forget to set a timer). To be sure that the center of the dumpling is really hot, I use a toothpick. I stick a toothpick in the center of the dumpling and leave it for a few seconds. Then I remove it and touch the toothpick. It should be very hot. If it is, the dumpling is done. yes it does thank u! and thank you for the shrimps as well ! ^_^ here in the greek mcdonalds they have just for easter when people here eat only fish and not meat(it has to do with christianity!), they sell fried prawns with batter on like the cauliflower you made? and they are so delicious! or at least were when i wasnt vegan lol they also made shrimp burger which was to die for. if you ever think of a recipe of fried vegan prawns or vegan burger prawns i am sure it would be to die for!

Yes! Sometimes they are more delicate but it is possible.

I had some frozen steamed dumplings but no way to actually cook them beside a pan ( which is something i had never done before). i found your video, followed the steps carfully and to my surpise, i actually managed to pull it off. so, even tho i know this video has been posted in 2015 (and that you'll likely never read this), i just HAVE to thank you for saving my dinner , BRAVO!

I prefer steamed ones. They don't lose any of their flavor and they're less dense than fried or boiled ones.

@@OmniPhantom i've never tried dumplings before but i am wondering if the fillings are going to cook aswell while steaming it? cuz the fillings(whether it's chicken or ground meat) are not cooked before the folding process.

I am also a McDougal follower and I felt there was so little oil that I chose to use it rather than have disappointing results. I plan to try it without the oil in the future as I am not sure it was necessary in a non stick pan. So delicious and so much better for you that a teaspoon or so of oil shouldn't be a deterrent.

the boiling tip of adding a cup of cold water then bringing back to the boil is a game changer. I can see how this will help to prevent the dumplings falling apart and making sure they are cooked through. When boiling can you use broth or miso soup? or should you cook the dumpling and then add to the soup?

I usually use water because it's less work and I'm usually just wanting to stuff my face with dumplings! But if you want soup with it, you can use the soup broth to cook them. This will result in even tastier dumplings.

i made dumplings today from scratch, they were DELICIOUS (vegan too). i bought the dough wrappers from my local asian supermarket for about $2 and it comes with over 50! great way to save money rather than buying them premade and they taste so fresh. there is also something so satisfying about making your own food! i pan fried them but i wish i had a steamer! i will boil them next time

oh dude it's been years! But typically, I like to mix some rice vinegar, a touch of soy sauce, and something sweet like sweet chili sauce or sugar or sweetener. And sometimes some sliced scallion (white parts) and a touch of garlic. Just mix some sour, sweet and salty together and you have a good dumpling dipping sauce!

Have you tried my method yet? It works best in a nonstick pan but work well in seasoned cast iron or carbon steel. You can also do it in stainless steel but you'll just need to be extra sure to add enough oil. Also, don't add too much water and really wait until it boils off before trying to lift out the dumplings.

uh-oh! Next time, if you get to the stage where you need to add water BUT you can see lots of oil, you can tilt the pan to the side and scoop up excess oil then a spoon, and then add the water quickly and close a lid on it. Safer!🤗

I tried this recipe out and it's awesome, but I made the mistake of using whole wheat flour!!!! Why???!!!

Sometimes I do that when I'm trying to be "healthy." LOL It's not as tasty. Also, the bran in whole wheat flour tends to cut into the gluten so the wrappers aren't as stretchy and easy to handle. Now you've learned your lesson. ;-)

Yeah, the consistency of the of the whole wheat dumplings is more like that of tortillas . So I felt like I was kind of eating Mexican "empanadas"

I used the panfry method not knowing that it was a thing, it just seemed logica to me: the bottom is Golden so it must be oil and then steam with water

Make sure to use a nonstick pan, otherwise frying the bottoms and adding water will not work. Everything will be stuck to the bottom. I decided to try this method because I like experimenting; I should’ve stuck to how I usually do it. This experiment was a disaster. I do wonder if it would’ve worked in a nonstick pan.

WTH? That boiling process is as complicated as I have ever seen. I'm cooking a whole lot more than that amount and adding cold water and waiting for them to float just isn't cutting it.

Wait for it to come to a boil, then add cold water and repeat... that helps prevent the skins from bursting. Doesn't matter if you make enough for two or 5 people. Sorry, I don't cook for more. If you don't want to do that, just accept the burst dumplings. No big!

Is it possible to cook them in microwave ? do i dip the frozen dumplings in water and put inside or just directly without any water ?

Yes, I don't have the exact method for you but I will keep your question in mind. I used to microwave frozen dumplings in a large plate with a little water in it. Then added one of those plastic microwaving covers before microwaving on high heat. I don't remember the timing -- honestly, they were often overcooked on the edges. But when you're hungry, it's okay! Next time I get hungry in the middle of the night, I'll try it and record the results. Hopefully good enough that I can share in a future video.

I tried to make pot stickers where you fry them for about 3 minutes then steams them with water for about 8 minutes. The dumplings still looks see through (I used wonton wrappers from the grocery store) and my ground pork filling didn't cook completely. It still looked pink... I only used a teaspoon of filling in the dumplings??? Am I supposed to cook the filling before hand?

I'm a dumpling maniac. I've made my own before but either didn't get my dumplings thin enough(chewy mess) or I followed a recipe using ginger(I hate ginger) and just couldn't eat them. I'll definitely be trying again, third time's the charm.

Not when you follow the directions. Don't put too much oil. You're not deep frying. No explosions.

Hey Mary, I'm trying to make a vegan versions of all the dim sum that I ate as a kid, since I haven't eaten meat in about 8 years, and I miss dim sum so much! At the moment I'm trying to make sui mai, but I can't quite figure out how to get the texture right. Would you consider doing a video on this or do you have any suggestions? Much appreciated. Just found you helpful video. I have a question i plan to make vegan. Chicken Dumping Chicken soup. My chicken is should i boil the dumplings in the broth (and for how long) OR can i pan fry then put them in the soup the last 10min of cooking? 🤷🏾‍♀️

You can boil the dumplings in broth; just use the same directions as in this video for boiling dumplings. You could also pan fry them and then add them to your soup. Just a different texture and up to your taste!

For the steamed variety, you can use pieces of parchment paper or the natural way is to line the steamer with lettuce or cabbage leaves.

Did you make my dumpling recipe? Usually if it falls apart it means either 1) the dumpling was just not well made - it happens--, or 2) you used a bit too much water so the wrapper disintegrated, or 3) you didn't let the water cook off completely so the wrapper was still soggy when you tried to lift off the pan.

whoa be careful! Got to have that pan lid at the ready and pour the water quickly. Also don't use very much oil

These were so scrummy Mary! I swapped the wood ear with finely chopped rehydrated kelp/kombu, as I have a glut of kelp atm, which worked out really well. Looking forward to experiment with the fillings/cooking methods. Cheers!

The bamboo steamers were from a Chinese housewares store. They sell them at Chinese supermarkets too. As for the metal pot with steamer basket it was by Cuisinart but I don't think they are for sale anymore.

I like to steam and then fry the bottom. They get the deliciousness of steamed dumplings and the crispness from frying 👌

Hi Mary. I am wondering if it is necessary to use oil at the bottom of the pot when steaming? It would really helpful!

They will stick if you don't house anything. You can also use cabbage/lettuce leaves or parchment paper ; just like some holes so the stream can come through.

Yes, I decided just to oil the bottom for the video. You can choose one or the other method. I like to use parchment muffin liners for dumplings so that you can pick them up one by one. Although, I suppose that is a little wasteful. You can also get circle cut parchment papers that are made for this purpose at East Asian grocery stores or household goods stores too. Thanks so much!
