INGREDIENTS:
4 PIECES LAMB SHANK (ON THE BONE)
1/2 CUP OIL
2 TSP GHEE
2 SLICED ONION
1 TSP PUNCH PHORON
1 TSP WHOLE CUMIN
3-4 BAY LEAF
3-4 PIECES CINNAMON
10 CLOVE
10-12 PEPPERCORN
6 CARDIMON
10-12 CLOVE GARLIC
1 TBS CHOPPED GINGER
10 GREEN CHILLI
1/2 GREEN PEPPER
2 CUPS FRESH TOMATO PUREE
HANDFULL CHERRY TOMATO
ENOUGH WATER TO COVERR THE MEAT AND COOK FOR 2 HOURS
GARNISH WITH CORIANDER AND A PINCH OF METHI LEAVES
SPICES:
2 TSP SALT
2 TSP FENNEL POWDER
1 TSP TURMERIC
2 TSP CHILLI POWDER
3 TSP CORIANDER POWDER
2 TSP CURRY POWDER
1 TSP CUMIN POWDER
1 TSP GARAM MASSALA

This looks so good. I have some lamb shanks and I never thought to curry them. This is a great recipe and I will try it. I don't have some of the seasoning such as the Bengali masala but I think it will taste quite good too. Thanks for the recipe.

I'm very impatient. So meat of the size like that I'll cook it in a pressure cooker. It cuts down the cooking time in half and I don't really have to attend the meat too much and let the pressure cooker do the job for me. It's quite a staple item in most Asian household especially from South East Asia.

Yum Yum Yum. Can’t wait to try this. Didn’t like lamb when I was young. I’m 71 now🤭😳 The only way I could eat it was in a Bhuna Lamb Curry. Then I started to make Lamb Shank Kokinisto (Greek) few yrs ago. This will be next! Might need to 1/4 the recipe as I’m on my own 😂 no visitors till after Covid lockdown. I’ve got lamb shanks in the freezer. (6 😂) Need to google phoron n make it too. I have a big selection of spices so hopefully all the ones I need. Thanks for the inspiration.

@@triplow1 £21...not inexpensive! Normally I buy a shoulder of lamb and bone/trim that as a lot better value. Shanks uses to be really inexpensive before they became trendy, much like beef ribs (not rib of beef)

I thought to mention that not only did you give superb directions that are easy to follow, but the real strength of the video for me was the way you showed the LEVEL OF HEAT at each stage! Paanch Puran is a Bengali tempering spice mix, and not a Bangladeshi spice mix. Unless it was concocted after 1971- which I doubt, as it's been used in my family for at least three generations.

You mentioned briefly it could be cooked at a simmer for 8 hrs. Did you mean in a slow cooker. If not, do you think that would work as well. In the US and will try to hunt down Punch Phoron. Also, you mention Benghali Bay Leaves, what is the difference from regular bay leaves. Do you strain the sauce at the end to use over the lamb shank. Thank you for the recipe. Hope I can duplicate it! P.S. Just read down some of the comments and you said yes to the slow cooker. Thanks again

I am watching this while having a chicken biryani that I made, thinking I am the king of the hill. But your lamb shank takes the cake! A pinch of safron and a sprinkle of cashew nuts and it would be a "Shahi", fit for a king. Lol

Hi I made this recipe but softened it in my PPC for 45 minutes. Fried in oil and then in PPC. And then the steps you did.It took less time than yours but it just as nice. I also noticed when you kept adding water you did not check the flavours which would have been diluted by then? I had it with nan and white rice. Delicious.

Would havd been better eithout all the oil in the cooking as the lamb shank has a lot of connective tissue fat which will tenderise the meat. The sauce looked very greasy. Just me opinion after cooking lamb shank for over 30 years professionally.

Not sure if you eat beef, but I cook an oxtail curry very similar to this - slow cook for about 5 hrs, falls off the bone and melts in your mouth.

Reminds me of a goulash but use beef instead and paprika. leave it cooking all day on a low heat.

I will defo do this, but I will probably do up to the point of putting the shanks into the sauce on the stove. Then transfer to the slow cooker for 4-6 hours. Can't wait to give it a try :-)

What about make the spice base sauce, brown off the shanks, stick them in a large slow cooker with the spice base + water and slow cook on low for 8 hours, overnight or early morning would be good as it is ready for eating !
