That fond looks burnt af. Sear the meat without seasoning (or just S/P) and add the seasoning when the before the liquid. You can toast the spices with the veggies to wake them up a bit.
Wake them up? Now it's WOKE food, ha ha ha! Good pun. No spices are not burned. The paprika always looks like that. The taste is fine. My steaks look like that too. That is why they called it Blackened Redfish, as it looks blackish. You have to add the spices to the steaks or its not the same. There is a Maillard reaction with the steak juices, spices, and hot pan.
