How to Cook Oxtail Stew

Ingredients
Bag of small oxtails (8-10)
Large Oxtails (4-6)
1 onion
5 cloves of garlic, minced
Salt
Black Pepper
White Pepper
3 bay leaves
8 star anise
1/2 cup of anise seed
1/8 cup fennel
Bowl of rice
4 carrots
1/2 head of cabbage
8 small red potatoes
Directions
Poach the small oxtails in a saucepan of water and the aniseed for at least 45 minutes and then set aside
In a large stockpot, sear the large oxtails before setting them aside with the small ones
Prep your aromatics and sauté them in the oxtail fat and fond of the stockpot with some black and white pepper and salt.
Place the oxtails back in before covering with chicken stock and bringing it all to a boil. Reduce the heat after that to a hearty simmer, covered for 3-4 hours.
Prep your vegetables for the stew: Chop your cabbage, carrots, and potatoes.
When there is 45 minutes left of your cook add the vegetables and whole spices, bring to a boil and then reduce to a hearty simmer again for 45 minutes. The oxtail meat should fall off the bone.
Serve on rice

I live for the moments where the creator's eyes basically go o.o in response to their creation. Some times I feel like I'm missing out, being a vegetarian, but that anise and onion trick I'm certainly gonna try out, so thanks for that!

@@jonkung are anise seeds and star anise the same and work the same or perform differently? I am assuming that thevseeds come from the seed pods of the star but that logic is not always true. Love your videos BTW . 🖖

The note about the licorice taste combined with onions. That's why I love your videos. Those little nuggets are so appreciated and open up a lot of avenues for people to try cooking of different kinds - and understand why they are combining certain things/getting certain results.

Well, this stew might also be brazilian. In Brazil we call it “RABADA”, a very famous and cheap sort of oxtail stew. Except for a couple of seasonings (it depends on the house though) and the fact that we usually cook it in a preassure cooker, it’s pretty much the same dish you just prepared!

Ooof there is a Caribbean restaurant I go to in Houston…there oxtails are a complete game changer. The way they cook the oxtails the meat just falls of the bone and is so savory!

Ok the ground anise and onions????🤌🏾 the taste!!!Gonna have to put thay in my back pocket like an unknown reverse card 😂😂 Being Caribbean I've just realized how much I've taken for granted when it comes to the fact that so many cultures contribute to our culinary palate. Love the story behind this 🥰, but it seems normal to me because I am used to 'Asian' execution in so many home dishes as well as African and Indian. What a crazy world

I'm an oxtail minimalist. I throw the oxtails into a slow cooker, add a little beef stock, and cook it on high for at least four hours. I season it only with salt. The result is like melted beef and fat that falls off the bone. I cook beef ribs the same way. The natural flavor of the beef is incredible.

Being Indian with culture that hails from Tanzania, I was always confused with being culturally authentic. Later years, I realized that's why our home cooking hits different than standard Indian fare because there's more to it. The marriage of cultures is what makes our food special and I like that it's something I can share that, though may not be show-stopping, is comforting and unique.

I remember my grandfather would make oxtail stew when I was young with a pressure cooker. Then when I got married to my husband who is Jamaican. When I went to his thanksgiving dinner, and LO and behold, they made Oxtail! Apparently, there is a Chinese colony in Jamaica that helps influence the culinary makeup there. Everyone benefits the mixing of cultures.

The nice added bonus of working with oxtail is that if the bones are collected, washed, and bleached in peroxide, that you give yourself the opportunity not only to learn and appreciate the complexities of bovine anatomy but also giving yourself a macabre excuse to make a necklace or grotesque sculpture from the bones should that be your interest.

My Godmother is Jamaican. She doesn't like the big tails either. She likes the large ones that are sliced thinner and they can be hard to find. There have been times where I've driven almost 2hrs to get them for her. She's an amazing cook so it's worth it tho lol

The French in me would say “Le creuset “ , but Love that you use “Staub”. I use red wine for my oxtail stew, and the fresh bouquet garnit. But your version is outstanding, and it is an achievement that this is 1 of the first dishes that you’ve mastered. Last point of view to your porc belly, goodness that is just the cherry 🍒 on top of the cake , and all this in the same video. Chef there are not many words in my vocabulary to qualify in a just manner my administration for your cooking. Bon appétit and thanks for the share, with your unique sense of humor, are you sure you’re not French 😃😂

i bit different from brazillian RABADA, when i make it i like to season it well, a lot of onion, tomatoes, garlic, cook it in stok+black sweet beer, let it cook for a long while. menawhile you make a bit of creammy polenta to eat on the side, and finish it with fresh cress leaves.

It takes 1 hour on a pressure cooker. And it falls from the bone! Oxtail is very traditional in Brazil, I make it with red and green bell peppers and lots of onions.
