Great vid..shows very well simplicity works so well with the high quality of scallops..i have them cooked in a similar way..it don't get better.😉🍷

Back when we spent two weeks in Ireland, I remember having black pudding with huge thick slices of tomato. I can't remember exactly what the black pudding tasted like. I do remember liking it, but it didn't stick with me. But the tomatoes sure did. I'm 110% certain they came from some local's garden close by. They never saw the inside of a supermarket, no doubt!!! Maybe better than my Aunt Hilda's. Maybe!

I add fresh mint to the puree, then sieve it to get a smooth puree, otherwise its a mushy pea consistency, that's my preference though. Good video and nice recipe

Top job, love this one. I'd be tempted to add a teaspoon of mint sauce to the peas, the vinegar would help cut through the fat in the pancetta.

Are you a professional chef? I just bough scallops from my local fish monger today to try for the first time. He said to try it with black pudding as well like you've done. I'm not too fussed on peas, so I'll have mashed potatoes instead. If you were to go to a classy restaurant & order what you've cooked or something similar, that would cost you well over £20. I picked up some dressed crab as well today, some salmon stakes, fish cakes as well. I was just over a tenner to eat healthy when I'm on a budget. If you know the right places to go & you're on a budget, you could eat healthy at the fish mangers cheaply, they do you deals as well. He threw in a handful of the smaller scallops for free as well today as I've never tried them. I'm just looking at getting better at cooking my own meals instead of ready meals myself. I find ready meals boring, I've been impressed by my local fish market. I've learned a lot from watching your video to cook scallops. I'll just be having one, my stomach is small, I like smaller portions. That didn't take long at all what you rustled up there. All the best.

thanks bain.im a butcher.also a fishmonger. and former butcher of the year . As for the cooking I am completely self taught.its just what I have picked up from years of food programmes and a unhealthy addiction to cookery books. I have had no training what so ever.some of the best chefs in the world are self taught belive it or not . Thomas keller.Heston Blumenthal, ferran adria.charlie trotter.raymond blanc, gordon ramsey. and jamie oliver.so apart from the last one im in good company. I have been interested in food from a child. and have cooked.since I was 18.all the best. Scott

you never peeled them as i can see the non edible piece still left on it which red roe that connects to the scallop , That piece is like eating a piece of grizzle , What did u do with the red roe itself ???? That can be eaten might no be everyones cup off tea but it can still be used .. and you can also dry them out then turn into a powder

colintraveller Hey colin,i bought these with the roe off,its just how they had them at the fishmongers,im not a fan of the roe myself,but like you said drying them and using them as a saesoning is a great way to use them,especially if people dont really like the roes whole,plus,there was no grisstley bits on those scallops at all,it was all edible,i know cause i eat them,many thanks.Scott

Tunnan Tan Tunnan,check out my sausage videos,make the same as normal sausages just dont stuff the sausage mix into skins,instead make into patties or roll them by hand into the desired shape,hope this helps.Scott
