I LOVE soba noodles...i have been making all of these recipes on ths video over the past few days - SO delicious!! Two questions: on the spicy soba noodles, the recipe said "vinegar". Did you use rice wine vinegar, black vinegar, or another type? (I have them al, and others, but want to duplicate your flavor profile to be authenticate to your intent...I also used Japanese soy sause, and not Korean soy sauce, "just because you used - Korean" - Gochujang as I know you use a Japanese flavors as your base, being from Tokyo. Let us know if that is an incorrect assumption. Gochujang has become so popular all over the world over the paste few years, and i love it! 😊) Question 2: At 7:03 i heard a shaking sound that sounded like sesame seeds going in to the dressing, but nothing was listed for that on your ingredient list. Did you add sesame seeds both in the sauce and then on top - or was that something else? Thanks for the always wonderful recipes!
For eggplant: my moment always heavily salts the eggplants and then takes off the juicenthat comes out with a kitchen towel. - removes the bitterness :3
I just returned from Tokyo... And i ate soba in all the local ramen places, would you said those are OK too? The noodles did not looked liked yours... 😂 But i will try to make soba at home ❤
