☆ Make sure your dough is well chilled
☆Roll the dough to a thickness of 4 mm (I use slats for this).
Make sure the dough doesn't stick to the surface (put a little flour underneath)
☆ Dip the cutter in flour before pressing it onto the dough, or dab some flour on your dough.
Press the mould onto the dough and slide it back and forth on the surface (to get the edges clean)
☆ now take the cutter with dough in your hand and gently rub it with the palm of your hand again to help the imprint in the dough and to get the last edges clean.
☆ gently help the dough out of the cutter with a clean, thin brush, using a brushing motion, especially in the difficult corners
You can also tap the cutter gently with a rolling pin to help the dough come out.
