Thank you for sharing the useful tip - oil smoke not wok smoke. Oil has to be well heated before fish in. Flip after one side fully crispy 2 mins Coat corn flour to keep fish dry before frying. Can add egg yolk.

Loves these fish. Esp when they are fresh.
