It's ok to drink Dal, but in India, Dal is used as a side for rice or bread (roti). Rarely does anyone drink it as soup. I do drink Dal sometimes when I feel like doing so :)- The rest is traditional Indian food. I don't believe there is one Indian who does not like Samosa. We eat it any time we feel like. Sometimes when families get together we have Samosa or Pakora as a snack. The thali you are eating looks delicious. Please don't feel compelled to eat with fingers. I personally prefer eating with a spoon when I am at a restaurant or eating outside my home. Cashews are relatively expensive in India too. In restaurants they use a few cashews and other ingredients which are less expensive to make that cashew paste for the dish - it is not all cashews or they would have to price it at a level no one would pay.

Dal is not actually a soup, it is a kind of liquid element in our “Thali” which is eaten with rice. We always include “Dal - Chawal” (chawal-Rice in Hindi) in our everyday meal. You should try Dal with Rice, this is how we Indians eat Dal and it’s one of the comforting food. You must also try Dal Khichdi, which is a combined dish of dal , Rice and spices, cooked together.

Gravy becomes smooth because we use cashew (soaked in hot water for 30 minutes and ground to fine paste) paste. Here in India we grow cashews... We get cashews for much lesser price. I buy cashews for INR 600/kilograms. When we add cashews in our curries...it becomes richer in taste. Jessica...here you go.. I will give you the smooth gravy recipe (an easier version) 4 big onion sliced 2 big red tomatoes sliced 6-8 garlic cloves 1&1/2 inches of ginger chopped 2 green chillies A handful of fresh coriander leaves 1/2 cup or little more Cashews 20-25 pieces of raisins ( kishmish) It's better you go to the same grocery store and ask them for Indian cashews and raisins Some dry spices An inch of Cinnamon 3-4 Cardamom 5-6 Cloves Kasoori Methi (dry Fenugreek leaves) Kashmiri Chilli Powder If you add more spices... While you eat...the spices will hit you hard. The measurements which I have given you are perfect. Veggies It's absolutely your choice I usually add French Beans a handful chopped in finger size 2 Carrots chopped in French fries size A small cauliflower...cut and take out the florets ( add these florets in boiling water and add 1/4 teaspoon salt. Boil for 3-4 minutes. Put it in a strainer...let them cool) Paneer cut into cubes. Button mashrooms (halved) Jessica...if you use Soyabean oil... it's better. No doubt coconut oil is good. Coconut oil is used for South Indian cuisines.... and only for particular dishes. You ask the store keeper for Kerala Parotta... It's easily available. You just need to roast the paratha on hot pan sprinkling some Soyabean oil or butter... All over India it is called as Paratha and in Kerala it's called as Parotta... Tastes yumm... Firstly you need to soak cashews and raisins in a bowl of hot water. Heat 1/2 cup of soyabean oil in a pan, heat it, add French Beans, add a pinch of salt, saute them for a while till they look properly fried and 75% cooked. Take them out and keep them on a plate. Don't use napkins. In the same pan there will be leftover oil, in that you add carrots, and the same procedure follows...next one by one veggies even paneer and mashrooms you fry and keep them in the same plate. Next in the same pan, add 2 ladles of soyabean oil, heat it, add 1/2 teaspoon of cumin seeds (jeera), once the cumin splutter, add sliced onions, garlic cloves, chopped ginger and fry them on a high heat for 5 minutes. Once you see the onions and translucent...add sliced tomatoes, 2 green chillies... ( Don't add too many chillies. For cashew based curries too many chillies won't match. ) Fry it till the tomatoes become soft. Off the stove and let it cool. Add soaked cashews and raisins... Add roughly chopped fresh coriander leaves, Altogether grind them to a fine paste using very little water. In the same pan heat another ladle of oil, heat it, add 1/4 teaspoon of cumin seeds, add 1 teaspoon of Kashmiri chilli powder, immediately add the ground paste. ( Please note: when you add chilli powder, you should be more cautious.. chilli powder easily burns and becomes black...that shouldn't happen. It totally spoils the taste as well as colour. ) Fry this gravy on a low to medium heat for a while. Add all shallow fried veggies, give it a proper mix, cook for 3 -4 minutes covering the lid. Adjust the gravy consistency by adding hot water. Lastly add a tablespoon of Kasoori Methi by crushing it in your palms. Taste and adjust the salt. Now you can serve this veggie gravy with Parathas.

Your energy as usual awesome 😎🤠. Vibes positive🤟. Loved ❤️ the video. Few dishes you should try: - White tandoori or Pahadi Kebab - Soya Chilli (Must try) - Egg pokora - Chiken or Mutton (Goat) Keema. - Prawns Masala - Egg Masala - Dal Makhani - Jalebi with Rabdi(Dessert) - As you guys love Gulab Jamun so much, try it with Vanilla 🍨 ice-cream. Take a warm gulab jamun with almost no sugar syrup(dry) and eat it with cold Vanilla icecream. Will wait for your video on Indian food. Enjoy 👍.

Jessica, spot -on for eating with your hands! eating with your hands not only feels great, traditional and authentic, but also connects you to food in a deeper way by activating your sense of touch , sense of texture, sense of smell, sense of sight( when u see a colorful platter of food) all these are important to activate your sense of taste. It’s recommended to have food on banana plantain leaf .If one cannot eat on a banana plate, the next best thing is to have it in copper plate/ glass / bowls as trace amounts of copper is good to enhance your blood oxygen levels. Finally steel utensils which are neutral. Discourage the use of plastics/ one time use cups, plates as it’s not only toxic but bad for the environment. Also if you eat with your hand, the temperature which your fingers can tolerate (hot/cold) is the same temperature which your tongue can tolerate. So if your fingers feel the food is too hot , it’s likely your mouth will also find it too hot- an experience which you cannot get with the spoon :) Also most Indian thali are on a banana leaf which not only is healthy and helping the food not alter its taste when it reaches your plate , but the green leaf adds that calm/ connect to nature, and also enhances the color look of other foods on your plate. All these dates back to ancient Indian Ayurveda and science on why and how..

It's like you becoming a flavourist or a perfumer... When you eat an Indian Thali, you can try a number of dishes with various permutations & combinations. Resulting in an almost endless variety of tastes catering to your tongue That's the uniqueness of an Indian Thali, some exclusive restaurants offer Vegetarian thali with 108 dishes - in both North & South India Jessica, try authentic South Indian filter coffee... Possibly, the best coffee in the world.

The yellow color of the daal is partially from turmeric but it is primarily from the kind of lentil used. The lentils which cook as yellow in color are chana, tur (arhar), moong, and pink masoor. So the lentil soup or yellow dal could be any of these lentils or their combinations.

Daal is not a typical soup. It is a staple food here in India where we eat daal with rice daily at home. Just squeeze some lime on top of the daal and taste the magic. The curries which include cashews are so silky smooth that's because first we heat a pan and sautee 2 sliced onions, 7-8 cloves of garlic, a little ginger, two large sliced tomatoes, , 2 geeen chillies/red chilli powder, some salt, turmeric, 2 teaspoons of coriander powder, 1.5 teaspoon of cumin powder and about 10-15 whole cashews(soak the cashews into lukewarm water for 10mins before) into 2 tablespoons of butter and 2 teaspoons of vegetable oil. We sautee it for about 8-10mins until the raw smell of the spices go. Then we set it to cool aside for 10mins and then grind the entire thing into a mixer grinder until its smooth. Then we use a strainer n strain the paste directly into the pan and then you can either add pre boiled vegetables of your choice or some marinated n shallow fried chicken to the gravy and voila your dish is ready! Stir it for another 5mins and add some fresh cream on top with some extra butter to make it more silky smooth! Do try it. 😋

Dal that Pulse soup is eaten with rice. It is usually eaten after Sabji (curry) Chapati which is 66-74% of Thali, rice used in northern India is not same as southern India so it should be consumed less as second staple. Wheat has fiber and takes more time to digest, while rice gives quick energy.

Jessica & Alfonso, it's nice to see you both exploring different cuisine. Though you have enjoyed thali there, I request you to visit Pune for more authentic Maharastrian thali or other unique traditional cuisine. As this is not a authentic one.

Ye ma'am. In India most of homes and restaurants use copper bronze and clay and iron made utensils. And trust me these elements enhance flavours.

Heyy Jessica...Recently started watching ur videos & let me tell you u guyss are amazinggggggggg! We are miles apart but It feels sooo homely as if me & my sister are eating the food face to face. Also I had had a Q. that do you guys first shoot all of the video n then eat that all or simultaneously....I mean doesn't that food become a little less warm later if you shoot first?? Also, I dont know whether u have tried it or not...but would highly recommend u guys to try Paneer Kentucky (fried one like pakoras) with its heart and soul sezwan chutney...I dont know u get it there or not...But if u do U absolutely must try it in the nxt video. Love from India. love to little Alfonso...his manners shows your upbringing...he ia a gem of the video!

Usually i eat the bread first when it's hot/warm with the main course and then when the bread is over, i plate the rice and eat it with the remaining main course. And if there is still some rice left, i then finish things with the rice and dal. And then finally have the dessert.

Samosa making-First turn the flour paste into square small sheet then fold it like a pouch to fill Aloo masala then close the opening and fry it in oil.. So to speak.
