I ve seen at least 20 videos on how to fillet a seabass and this is definitely the cleanest. Everything seems so easy when you do it. 👏🏻

Your method of fillet fish is best than all as i have seen a lots of chefs who left the meat while fillet but you done stunningly best. 👍💖

Love you, Jamie. Got my husband to do the fillet part thanks to your demonstration. Since we had a small boat (sold it) he is used to filleting a Ling Cod or a Snapper, but not Sea Bass. So VERY helpful. We are grateful for your video!

Well, this will be new for me! I bought a whole sea Cass and it said cleaned. So sadly I w@s wrong!, only thing cleaned was all the middle. So this is exactly what I need to do! You made it look pretty easy. I have cut the head and while tail off already. Wish me luck…it’s my dinner! And suggestions on what seasonings to use?

I'm studying cookery in college and can fillet a flat fish but am yet to do round fish and always wondered how it was done so this was really useful! :)

Great video. Even with a sharp knife, I always struggled cutting the fins off. Using scissors looks much easier.

More videos like this please on the basics. Everyone and anyone can be a food critic armed with their smartphones but the true foodies are the ones that want to get down and dirty. I want to know what seafood is sustainable in Australia, what fish contain too much mercury so I can avoid giving it to my baby, how to do simple butchery etcetcetc. Some of us are not as lucky to be able to attend culinary school (and went to med school instead! :P )

I was a critical cutter in a chicken factory and its down to that ! That i didnt even need to watch this i worked it out on my own i got it perfect first time that was 1988 when i was 18 now im a pro at deboning anything that used to move lol 😂

YES! This is how it's done! Bought some seabass fillets from sainsburys the other day and the flesh was all torn and broken where someone had forcefully been pulling out bones :/

When you filet the bass, and you cook with the scales on, are you descaling at all? Or just cutting the fish, and putting it on the stove?

Always descale. Depending where you get seabass it may come descaled already.

I bought a sea bass from the fish counter and tried to fillet it without watching any how-to videos. I just chopped the head and tail off then grabbed the spine and pulled it out.

As an asean that use to cooking the fish whole with bones, i wonder what you'll do with the bony part of the fish? A filet is for the visual aesthetics and the easiness of cooking/eating..

You could boil the bones to make a fish stock. Most Westerners would just throw away the bones though.

Here in Spain we tend to have our fish whole....if not I ask the girl (or boy!) in the supermarket to fillet it for me!.....whatever Sea Bass (Lubina) or Sea Bream (Dorada) are my favourites.....

To fillet a fish by yourself is all about prestige. It feels better if you have dont it by yourself instead of letting someone else do it :P

That's the best way to eat it. On the bone it's always more flavorful! Have you ever tried to eat bass or bream cooked in a salt crust? It's divine!

I cook mine whole too, tend to put it in the oven in a little tin foil parcel with tomatoes and garlic and all the seasoning with a splash of oil. Or pan fry until super crispy

I wish this started completely from a fresh fish. I.e. how to remove gills and guts.I buy the fish completely fresh and untouched so that they are cheaper.

If you want to remove gills and guts, buy a deba and watch videos on doing it with that knife. More versatile than a shitty French/western fillet knife. The flexible fillet knife is traded out for bigger fish, showing its limits, where a deba is changed for a bigger deba for larger fish. The japanese aren't wrong when it comes to fish.

Not a big fish fan except perhaps cod. I can not abide a "fishy" taste or oily mouth feel. Is there any other clean tasting fish I can try?

Talapia, cod, bass - white fish, that goes well with deep frying and has a "chickeny" texture and least ammount of oiliness. Tuna - sea fish with totaly different taste to rest of them. Sea herring, haddock - when prepered with acid (vinegar, lemon/lime juice) loses fishy and oily texture and becomes like a pickled chicken kind of deal. Steak of salmon when realy fresh and not overcooked is not realy fishy tasting. If you don't like oiliness, you can prepare smoked fish salad - smoked haddock, eel, bass when mixed with mayo base souce is sorta like cheese spread with smokiness and fish tase, add some corn and peas (not mushy kind), a handfull of fresh herb like parsly/onion and you have a perfect spread on toas/sandwitch. Fish can be prepared in alot of ways that take away the oily mouth feel and leave with a light tender meat with unique taste. If you have a piece that smells/tastes "fishy" - it means it's not fresh. Fresh fish smells like nothing, like a washed hand.

Great video, but you did not mention that your fish had the scales already removed. It would have been helpful to know that before I got to the last step today and the scoring of the fish was not working because of the scales.

Undoubtedly a valuable skill to know but lets face it, nobody has any time for this unless you have personally caught a fish yourself just buy it pre-cut and save yourself the hassle.
