Florida Pompano is one of my favorite fish to eat and it's perfect for making nigiri and sashimi sushi. The filet is fatty, firm, and tender, all the quintessential characteristics for awesome sashimi. For those that never had this before, it is comparable to Japanese Hamachi (Yellowtail Jack) or Kampachi; though, Pompano is much fattier than the latter. Pompano is also great for Tataki (seared and sliced thinly) with Ponzu sauce.
This video will walk you through a step-by-step instruction on how to fillet a Jack. Also, the same method can be used on almost any other fish, such as: Snapper, Grouper, and Mackerel. One important tip for a better finish, is to always bleed your catch right after landing, this will produce a superior quality and the taste will be enhanced.

Appreciate your videos detail of why and how ! So much better than many videos out there where the viewer is left guessing what, why and what to feel for ! 2:35 As well as mentioning to remove dried blood, you might want to add on that water washing of dried blood at stomach / body cavity does not damage flesh for sushi as a membrane prevents water from going through.

yes, I can do some serious fish filleting, when I was a kid I used to stand near the fishing boats and watch the fisherman process their fish, and learned by watching, and I like to go fishing, I ate lots of kinds of fish sashimi in my life, pompano, sawara, buri, shiira, hirame, katsuo , suzuki, tai, tuna, salmon, and even some brazilian puffer called baiacu-arara, to metion some, :)

when I tried pompano the first time I was 9 in Australia and in 2017 my dad made sashimi from pompano and it was delicous

That's a deba I think. More important is that it is very sharp and the hands using it show respect for the fish and the consumer and sushi chef training.

when you catch your fish and you know your going to bring it home do you bleed your fish out before u put it on ice I always cut the gills of the fish to bleed it out before I ice them down

Yep, you did it exactly how I would. Bleed the fish as soon as its caught. Its a practice that a lot of commercial fishermen do too.

Do you have any advice on how to store these fish for making sushi later? I often fish the west coast of Florida and would like to bring some fish back to friends in Georgia to eat raw.

Absolutely, just bleed them when caught and gut it later. Pack it with ice and wait for 1-2 days and cut it for sushi.

Was the Pompano previously frozen? Aren’t you afraid of parasites and worms if not pre-frozen? Is it safe to eat fresh pompano like that?

Let me ask you this. I know this may be a dumb question but if i catch one right out of the ocean and take it inside how long do you not want the fish to sit. Should i clean the fish right away?

Definitely a good question. a lot of the "fresh" seafood that restaurants get have been on ice for a couple of days already (some even longer). I don't always have time to make sushi right away, a lot of times I put it on ice and inside the fridge up to 3 days before I start. But if you wait that long, I suggest gutting the fish first. GL!

Can you do this for fish you buy at a fish market? The ones at the super market I go to all have ice covered on them.

You can but still need to check the freshness. Depending where you are, you're probably better off buying fish that are local with less food mileage on them. It all really depends on the day you go, you might get lucky and get a shipment that was caught and delivered within a few days.

I love your videos, missed your signature background music on this one each time I watch it and always think about all the fish carcasses that could be frozen and later turned into stock. Caught it. Most of the Pompanos in stores are frozen farmed raised stocks. Nothing wrong with farmed fish but I prefer the quality of wild Pompanos better.

Linda Thai frozen variety would be "safer" because if there were parasites the freeze would kill it but you don't know the condition of the fish before it was frozen.

How do you make sure you are not getting parasites from consuming raw fish like this ?

+Vitriol Barbitol There is no guarantee, but the odds of you consuming a parasite AND to get sick from it is very rare with saltwater fish provided its prepped properly. Keep in mind there has never been a case of Anisakis surviving in humans. In rare occasions, they may get embedded in the stomach wall for over a week and cause abdominal pain, but Anisakis can not reproduce and and live out their life cycle in humans. In very very rare occasions, some people may need to see a doctor. Japan is the heaviest consumer of raw fish in the world and they almost never freeze their fish, yet, there no public outcry over food borne illness associated with eating raw fish. FYI, check the stats for the top food related illness, and you will find that consuming chicken is WAY more dangerous. With that said, the same is not the same for freshwater fish. Some parasites in freshwater fish can survive in humans. You should never eat raw freshwater fish, or at least freeze it for a few days first. Anyways, just avoid it.

I'm Never understood why folks cut off head and remove insides when filleting a fish? Just skip that part and filet down the spine. Discard head and insides intact without any intestinal parts or fluids exposed to the meat or the cutting board. Also, saves a heap of time. I loved the video though and am not slamming it, will try this next time I catch one.

Western fillet knife will work just fine, but it's difficult to cut bones with. This is a Japanese fillet knife
