How to Freeze Fresh Peas ~ The Blanching Process
In a large stock pot, bring 8-cups of water to a boil along with 1-tablespoon of salt. Cook peas for about 1 ½ - 2 minutes until crisp-tender. Remove from heat. In the sink drain peas in a colander to remove all water, turn on the faucet running cool water in the sink to offset hot water from the peas. Rinse peas in cool water. Transfer peas to a shallow pan or another pot. Pour enough water over peas to cover and eight cups of ice to create an “ice bath”. This will stop the cooking process. Allow the peas to sit in the ice bath (5-10 minutes) until they have cooled completely. Drain any excess water.
Using freezer safe quart storage bags, label each bag with the type of peas and date using a Sharpie marker. Add 3 ½ cups of peas (1 pound approximately) to each quart size bag and carefully remove excess air prior to zipping closed. Place each bag flat in the freezer for easy storage. Enjoy your peas!
*Blanched peas will store safely in the freezer for about 1 year.
**After one year the peas are safe to eat; however, the quality of the peas will decline slightly.
