Grilling a pizza on the Weber Kettle is a great alternative to heating up your house in the summer. BBQ'd pizza is a great treat and is amazing if you do it right. I've tried lots of methods for grilling a pizza on the weber kettle and I'm convinced this one is the best. In this video, I show you how to make your own elevated cooking grate and set up the kettle so that the crust is golden brown and the cheese is melted.

What size bolts and washers did you use?

The three bolts were 3" 10-24 ; nine #10x24 nuts; nine 5/16" x 1 1/4" washers. I didn't mention it because there are a few combinations that would work. 3" bolts are about the right size and I bought this combo because that is what the store had enough of.

I've grilled pizza many times. I used a pizza stone and just set it on the normal grate of my cooker. I have to say, it was some of the best pizza I've ever had. Even from a restaurant! Great info on how to do it! 👍

You can get good pizza that way. When I did it, the tops didn't brown well and so I moved it up to get more reflective heat off the dome. You are right, grilled pizza is amazing.

This works but is needlessly over-complicated. Just use a pair of fire/grilling bricks or even cheaper, a couple of basic red bricks for 50 cents at lowes to hold your pizza stone/pan. My dad and neighbor have been using red bricks for decades on BBQ grills with zero problems. Just avoid cement and you're fine.

First video I've seen using cast iron. I've hemmed and hawed over stones and steels, but I love cast iron and recently purchased a pan very similar to yours. Not the first video recommending a "trivet" but definitely see the need considering I have to bake mine at the very top of my home oven to melt the toppings. Your trivet is the ultimate practical solution bar none.

Thanks! You'll see a lot of people using stones because they transfer heat a bit slower. Raising the cast iron up a bit reduces the radiant heat and getting the cast iron too hot. I've also seen a lot of people break their stones and you'd have to drop this pizza pan to do that :)

@@GrillTopExperience Do not use pizza stones on charcoal. They tend to brake. Always steel or cast iron.

Clever idea, I’ve been making pizza at home for a very long time and this is my favorite tool, without the pizza oven. I’ve found that metal burns the dough if temperatures are not controlled effectively. I'm located in an area of the states that has a history of pizza making, not CA. I don’t have any connection to this company and this stone works on the grill or in your home oven at high temperatures. I've been using their products for over a decade I think, that and it will not crack, and if it does I think they will replace it. (California Pizza Stones online) From their web page: Pizza and Baking Stones That Do Not Crack or Thermal Shock Our Pizza and Baking Stones are made from a Non-Toxic Mullite mixture, containing a very high quantity of grog. Grog is clay that has been fired to 2500 - 2600 degrees then crushed and put back into our clay mixture. This makes our Baking Stones virtually indestructible and impervious to thermal shock. Oh, I stopped by here from Glen's channel, Good Luck and happy pizza making.

Cast iron seems to work well at lower temperatures, but over 500F and it'll transfer heat too quickly and it'll burn like it did on the Nutella Mascarpone pizza. I've been looking for a good pizza stone for the grill since my other one is too big to fit in the kettle. I'll have to look closer at California Pizza Stones and their guarantee. I did this exact technique but for the method used to elevate the cast iron pan. For that, I used the charcoal baskets (inverted) that Weber includes with its grills. I also preheated the pan on a gas burner. My cook time was 8 minutes for each of two pizzas. The results were spectacular!

Preheating the pan was a smart move. It can take a while for it to get hot enough, which makes it easy to get too hot. Thanks for reporting back. I'm glad you found a method that works for you.

I understand you used the elevated grate to place your pizza steel in order to get less heat on it cause the bottom cooks faster that the top. So when the topings will be ready you dough will be burned. But that way it takes more time to cook since your temps on the steel are low and the pizza becomes dryer and does not create a crispy cornicione on the top and fluffy inside. That is not the proper way. Leave the pizza steel on the first grate without the elevation, let it get to temperature (you need around 320 Celcius minimum) and use tinfoil on the top of the kettle, the shiny side of it, dress it all with tinfoil. That way you will get more radiant heat on top of the pizza and the toppings will cook mush faster. That way your pizza dough will get a shock like the one it gets on a wood oven and the cornicione will puff and cook the right way, the rest of the dough (center) will become crunchy and the toppings will be cooked. Trust me. Also the time of cooking a whole pizza will be around 5 to 6 minutes top. After the first pizza, heat the steel again for 15 minutes then put the second pizza etc...! I am cooking this way pizzas with a 47cm weber kettle and the results are very similar to a wood oven.

Great video! Question, if I'm using a stainless steel pizza pan, should it still be elevated? Would elevating with fire bricks work?

Fire bricks would work well too if you have them. A thin stainless pizza pan would work, but wouldn't hold as much heat. Your crust may not brown as well, but it's worth a try if that is what you have.

Do you find a ring of charcoal around the perimeter of the bottom of the kettle is working better than loading the two baskets on either side like in your first video? Bringing the pizza closer to the lid dome is awesome to know.

The ring makes the heat a bit more even and you might get away without lifting the lid and letting heat out to rotate it. The two basket method means you'll have to rotate.

That will work too. The air temp goes up the closer you get to the lid and getting farther from the coals reduces the chances of burning the crust.

The ooni looks cool too. It's a bit easier to regulate temperatures than charcoal. You can get really good results on the kettle without buying something else and that is a huge benefit.

Good question. The temperature rises as you get closer to the lid and it can be as much as a 100 degree F difference. It also moves it away from the fire so you are less likely to burn the bottom.

That depends on the pizza. This one has a thicker crust that would burn before it cooked at those temps. The lower temps give people a better shot at a successful pizza. The difference between done and burnt at 700F is very short.

I didn't start making pie until I worked at a wood fired operation in Portland, Oregon 2002 . 6 oz dough balls, working only with neapolitan crust ,zero sugar or oil. At the moment I'm contemplating, the fabrication of a 55 gallon drum to produce the same method..THANKS!
