Pro tip: chanterelle in hot pan, wait till water comes out and then cook in to the mushroom, lower the heat, toss in some chopped shallots, fry until glossy, sprinkle some flour and let it fry, pour over some dry sherry wine (few tsp), top up with double cream, let it thicken, finish it with some salt and fresh cracked black or white pepper (i prefer white, but be careful of the amount)... put on top of a fresh roasted bread, top it of with parsley (if you like it) and some grated strong cheese (i love Swedish Västerbottensost), put it high up in a hot oven until the cheese melts and form a crust.

I had to look up Milgi's after the mention! Wish I'd known they were doing food like that before they closed! I hadn't visited as I last went there before they went vegetarian and the meal was so bad I had to send it back. Sounds like it was turned around, shame to have missed that.

In german we call it: Pfifferling or 'Pföpfer' 😉 we have 5 types here.. - but there are many other good edible mushrooms!🙂
