INGREDIENTS
leftover pasta or 1 box of spaghetti
1 cup olive oil
about 4 -5 garlic gloves chopped or sliced - if you like it extra garlicky then use more Chile !
3 lemons ( about half cup one fresh lemon juice or more to taste )
1 cup parmesan cheese
1 cup chicken stock or leftover pasta water..
to save pasta water, simply take a ladle or 1 cup measuring cup and safely remove pasta water while the pasta is cooking, then strain the pasta after its cooked.
fresh parsley
fresh basil or whatever herbs you got hunny!
salt and pepper to taste, noticed I didnt use a lot of different seasoning, because this dish is truly simple and you don't have to over complicate it with different things, in my opinion. I wanted to taste the garlic and fish lemon so I kept it simple.
directions;
preheat a large skillet over medium low heat... add oil to the pan, heat for a bout 30-40 secs, then add your garlic and cook for about 5 -6 mins until garlic is soft.
add in lemon juice and then pasta water, but only use half of the pasta water in the beginning., and then add the pasta to the pan .. cook for 2-3 mins.. if the pasta seems dry add more water or chicken stock.. keep in mind this is NOT a dish that is supposed to "swim in sauce " its supposed to be light and fresh.
cook for additional 3 mins, and top with parsley and basil
enjoy!
To make the sauce without cooking it:
Add 1 cup olive oil to a large bowl
add in 1 cup grated parmesan cheese
add the lemon juice and basil , Mix together
salt and pepper to taste
add in warmed pasta and toss together and sprinkle with more cheese.
