Welcome to this new video where I will show you how to prepare a delicious Mauritian Eggplant Chutney, known as Satini Bringelle. This tasty dish goes perfectly with plain rice with a good chicken curry, or can also be served with roti or faratas.
Ingredients :
- 500 g of eggplant (brinzel)
- 1 large onion
- 5 cloves of garlic
- Salt
- 2 chopped tomatoes (if whole, roast them with the other ingredients)
- 4 chili peppers (or more, depending on your preference for spiciness)
- 4 tablespoons olive oil (for frying and crisping the curry leaves and brushing the eggplants)
- Coriander or parsley (replacing curry leaves if necessary)
